Orujo, in common usage, is a clear spirit distilled from grape pomace: the skins, seeds, pulp, and occasional stem fragments left after pressing wine. More precisely, orujo means the grape residue itself, while the drink is aguardiente de orujo, or pomace brandy. It is especially associated with Galicia and other parts of northern Spain. It belongs to a broad family of Mediterranean and Eurasian pomace spirits that includes Italian grappa, Greek tsipouro, and Georgian chacha, without proving that any one was the direct ancestor of another. Its survival links modern Galician identity to vineyard labor, seasonal cooperation, thrift, and hospitality.
