Reconstruction
Sodabi is a distilled spirit made from palm wine, especially in southern Benin and Togo. Its foundation is fresh palm sap, collected by tapping a palm and allowing the sugary liquid to ferment. Wild yeasts and bacteria begin working quickly in the warm climate, producing a cloudy, mildly alcoholic drink that is pleasant when fresh but highly perishable. Distillation concentrates its alcohol and aromatic compounds, creating a clear spirit that lasts longer and travels more readily.
The precise emergence of sodabi is not securely dated. Palm-wine production long predates the nineteenth century, but fermentation does not by itself establish when local distillation began. Distilling knowledge and equipment circulated through West African coastal and inland trade, including contacts shaped by European commerce, yet assigning sodabi an origin in exactly 1800 would be a reconstruction rather than a documented event. The tradition is better understood as a regional craft that became visible in colonial-era and later accounts.
Production generally begins with fermented sap from oil or raffia palms, although species and local practice vary. The palm wine is heated in a still, traditionally a small apparatus assembled from metal vessels and a tube or coil. Alcohol-rich vapor passes into a cooler section and condenses. Distillers judge successive portions by experience, aroma and strength; formal separation into standardized “heads,” “hearts” and “tails” is a useful modern description but should not be assumed for every historical workshop. Water may be used for cooling or to adjust the finished strength. Some sodabi is subsequently infused with plants, but plain spirit remains common.
Sodabi is normally consumed in small measures rather than as a substantial food. It is offered to guests, shared during social gatherings and used in libations or other ceremonial settings. Meanings differ among communities, so no single ritual interpretation covers the entire Benin–Togo cultural region. Production and sale have also provided income to sap collectors, distillers, traders and vendors, including participants in informal household economies.
Colonial and postcolonial governments alternately regulated, taxed or discouraged locally distilled alcohol. Informal production nevertheless persisted, partly because it relied on local raw materials and compact equipment. That informality can carry hazards: alcohol strength varies, poor equipment may contaminate a batch, and adulteration is possible. Modern sodabi consequently ranges from unlabelled artisanal spirit to tested, bottled brands. The continuing transformation of rapidly spoiling palm wine into a durable product links present-day bottles to an older regional economy of palm cultivation, fermentation, skilled distillation and ceremonial exchange.

Historical context
The Bight of Benin connected the kingdom of Dahomey and neighboring societies to intensive Atlantic commerce, including the devastating trade in enslaved people. Palm products already supported local subsistence and exchange, while European demand for palm oil expanded markedly during the nineteenth century. Fermented palm sap was an established regional drink, but the date and route by which particular distilling practices became sodabi remain uncertain. The modern borders separating Benin and Togo did not yet exist, and foodways moved through communities and markets that later colonial boundaries divided.
