Reconstruction
Sri Lankan arrack begins not with coconut flesh but with the unopened flower stalk. A skilled tapper climbs the palm, binds and cuts the inflorescence, and places a vessel beneath it to collect the flowing sap. The sweet liquid begins fermenting almost as soon as naturally occurring yeasts reach it. Within hours it becomes toddy, a mildly alcoholic, perishable drink; left longer in warm conditions, it grows increasingly sour and may turn toward vinegar.
Distillation solves toddy's central problem: its instability. Fermented sap is heated in a still, and alcohol-rich vapor is collected and condensed. Repeated or carefully controlled distillation produces a stronger, clearer spirit that travels and stores better than fresh toddy. Water may be added to bring the distillate to bottling strength. Some arrack is sold relatively young, while other versions are rested, matured in wood, or blended from spirits of different ages. Modern industrial equipment allows tighter control, but the production chain still depends on the hazardous and highly skilled work of palm tappers.
Palm-sap fermentation in South and Southeast Asia is older than surviving descriptions of distilled arrack. The date at which distillation was first applied to coconut toddy in Sri Lanka is not securely established. European travelers and colonial records attest arrack in the wider Indian Ocean during the sixteenth and seventeenth centuries, but such notices do not prove an origin in exactly 1500. The name belongs to a broad family of terms related to arak or araq, used for several distilled drinks with very different raw materials.
That distinction matters. Sri Lankan coconut arrack is made from fermented coconut-flower sap. Batavia arrack, historically associated with Java, was generally produced from sugarcane molasses with rice incorporated into fermentation. Mediterranean rakı, Balkan rakia, and other similarly named spirits likewise have separate ingredients and histories. A shared name reflects the movement of distilling vocabulary and practice across commercial networks, not one uniform recipe.
Under Portuguese, Dutch, and British rule, alcohol became an object of licensing, taxation, monopoly, and trade. Colonial regulation helped turn arrack from a local product into a standardized commercial category, while tavern systems and revenue policies also intensified alcohol-related harm. Today regulated coconut arrack remains strongly associated with Sri Lanka. It may be consumed neat, with water or mixers, or in cocktails. Contemporary bottles range from light blends to wood-matured spirits, preserving the essential sequence of tapping, rapid fermentation, distillation, and blending while operating on a far more controlled scale.

Historical context
Sri Lanka occupied a strategic position on Indian Ocean sea routes linking South Asia with Southeast Asia, the Islamic trading world, and, increasingly, Portuguese shipping. The island was divided among competing kingdoms when the Portuguese reached its shores in 1505. Cinnamon was the commodity that most strongly attracted European intervention, while coconuts supported everyday food, fiber, oil, building materials, toddy, and vinegar. Distillation had already circulated through Eurasia, but the chronology of its adoption for Sri Lankan coconut sap remains uncertain. Early modern maritime expansion later gave arrack wider markets and made alcoholic drink an increasingly regulated source of colonial revenue.
