Pu’er is a family of Yunnan teas rather than one fixed medieval recipe. It is associated with the tea-producing region and trading center now called Pu’er, whose name became attached to tea collected and marketed through the area. Yunnan tea itself has a much longer history, but assigning the modern product to the single year 1384 is not securely supported. During and after the Ming incorporation of Yunnan, tea moved through regional markets and caravan networks linking southwestern China with Tibet and mainland Southeast Asia.
Production begins with leaves from Yunnan large-leaf tea plants, conventionally associated with Camellia sinensis var. assamica. Fresh leaves are withered to some degree, heated to limit enzyme-driven oxidation, rolled and dried in the sun. The resulting loose material, called maocha, can be sold as it is or softened with steam and compressed into cakes, bricks, bowls or other shapes. Compression reduced bulk and made tea easier to stack, store and carry by pack animal, although historical forms and methods varied.
Modern pu’er has two principal styles. Raw, or sheng, pu’er follows the older production pathway. When young, it may taste brisk, bitter and vegetal; during suitable storage, chemical oxidation and microbial activity gradually alter its aroma, color and texture. Ripe, or shou, pu’er is much newer. Developed commercially in Yunnan during the 1970s, it uses warm, moist pile fermentation—often called wet piling—to reproduce some characteristics associated with aged tea in a matter of weeks or months. It commonly produces a dark infusion with earthy, woody or mellow flavors. Thus, describing all pu’er as traditionally “post-fermented” can obscure the distinction between deliberately pile-fermented shou and sheng that changes slowly in storage.
Drinkers typically loosen leaves from a compressed cake and make repeated short infusions in a small pot or lidded bowl, though larger vessels and longer steeps are also ordinary. Briefly rinsing the leaves is a modern convention, not a demonstrated medieval rule. Unsweetened pu’er contributes almost no energy, while caffeine content varies with leaf, age, dose and brewing.
Pu’er matters because it turns storage from a practical necessity into part of the product’s identity. Trade, compression and controlled microbial transformation helped create teas valued not merely despite age but partly because of it. Contemporary collectors sometimes treat cakes as investments, yet age alone does not guarantee quality: clean processing, traceable material and safe humidity remain essential, since badly stored tea can acquire unwanted mold rather than desirable maturation.

Historical context
The Hongwu emperor was consolidating the newly founded Ming dynasty. Ming forces had conquered the former Yuan-controlled kingdom of Yunnan in 1382, and the region was being drawn more firmly into imperial military and administrative systems. Mountainous terrain still made pack-animal routes crucial. Tea, horses, salt and other goods moved through overlapping regional networks connecting Yunnan with Sichuan, Tibet and mainland Southeast Asia, but the modern commercial definition of Pu’er tea had not yet taken its final form.
