Champagne

Reconstruction

Champagne did not appear fully formed in 1662, nor can its invention securely be credited to a single person. That year is important because the English scientist Christopher Merrett described to the Royal Society how adding sugar or molasses to wine could make it brisk and sparkling. His paper demonstrates contemporary knowledge of induced secondary fermentation in England, not the creation of Champagne in the French region. Deliberately managed sparkling wine became associated with Champagne during the later seventeenth and eighteenth centuries.

The region had long produced mostly still wines. Its northerly climate yielded relatively acidic grapes, while its chalk soils and underground quarries provided cool storage. Fermentation could stop during winter and restart as temperatures rose, generating carbon dioxide. In a sealed container, that gas dissolved into the wine and produced bubbles—but early bottles and closures could not always withstand the pressure. Stronger coal-fired English glass and improved cork closures helped make sparkling wine more manageable, although bursting bottles remained dangerous and costly.

Modern Champagne usually begins with Chardonnay, Pinot Noir and Meunier, though the appellation permits several less common historic varieties. Grapes are pressed, fermented into dry base wines and commonly blended across vineyards, varieties or years. A measured mixture of wine, sugar and yeast is added before bottling. Secondary fermentation then creates alcohol, sediment and trapped carbon dioxide. Ageing on the dead yeast cells contributes bread-like or toasty aromas. Bottles are gradually turned and tilted to collect sediment in the neck, which is removed by disgorgement. A final dosage may adjust sweetness before corking.

Spot something wrong in this reconstruction?

This sequence is the mature traditional method, not a faithful recipe for 1662. Riddling is associated especially with early nineteenth-century commercial improvements, and precise control of yeast, sugar and pressure belongs to later scientific winemaking. The popular story that Dom Pérignon invented sparkling Champagne is therefore misleading. He was an influential Benedictine cellar master whose work is associated with blending and wine quality, but bubbles existed before him and were not his solitary discovery.

During the eighteenth and nineteenth centuries, specialist houses expanded production, bottles became more reliable, and Champagne circulated through courts, restaurants and export markets. Its difficult production and high breakage initially reinforced its status as a luxury. Later mechanization, improved transport and protected geographic rules supported a much larger industry while preserving the regional name. Today Champagne remains both a regulated wine and a ritual object: opening a pressurized bottle marks weddings, victories and new years. Its celebratory image is culturally powerful, but it is still an alcoholic drink whose consumption carries health and safety risks.

Historical context

France was ruled by Louis XIV, while expanding court culture and long-distance commerce created influential markets for luxury wine. Bottles were still expensive and inconsistent, cork closures were being revived for wine, and poorly understood fermentation made pressure unpredictable. London’s Royal Society, founded in 1660, offered a new forum for reporting practical and experimental knowledge; Christopher Merrett’s 1662 discussion of sugared sparkling wine belonged to that wider culture of investigation rather than documenting a finished Champagne industry.
