Maturation may take place in steel, concrete, large neutral wooden vessels, or barrels.
Skin contact is an ancient feature of winemaking in general because early pressing and separation were imperfect, but that fact does not demonstrate that medieval Rebula resembled today’s deliberately macerated amber wines. The contemporary prominence of this style reflects a modern revival shaped by producers on both sides of the border. Conversely, the bright, technically controlled white version depends heavily on modern equipment, temperature management, and microbiological knowledge unavailable to medieval cellars.
Rebula’s significance therefore lies less in an unchanged recipe than in the endurance and renewal of a regional grape. It connects medieval documentary evidence, long-established hillside viticulture, and a modern cross-border identity. Historical context
The Brda–Collio hills stood near the territories of the Patriarchate of Aquileia and the County of Gorizia, within a politically fragmented northeastern Italian and eastern Alpine world. Wine moved in casks by cart, pack animal, and river or coastal routes, making nearby towns and Adriatic markets more accessible than distant consumers. Europe may have held roughly 70–80 million people before the Black Death arrived in the late 1340s. Vineyards were worked manually, fermentation depended on ambient yeasts, and cellar workers lacked temperature control, modern presses, stainless steel, and microbiological testing.
