Reconstruction
Mozzarella is a fresh stretched-curd cheese whose identity lies as much in motion as in ingredients. Its Italian name is associated with mozzare, “to cut off”: after a mass of elastic curd has been worked, the cheesemaker separates individual portions by hand. Bartolomeo Scappi’s Opera, published in 1570, contains an early secure written occurrence of the term mozzarella. That attestation shows that the cheese was recognized by then, but it is not a documented invention date. Claims that mozzarella itself originated at a particular medieval monastery or in a single episode remain difficult to verify.
The cheese belongs to the pasta-filata family. Milk is coagulated with rennet, and the curd is cut and drained. It must then acidify to a narrow functional range. Historically this could depend on retained whey or naturally active milk flora; modern producers commonly use controlled starter cultures. A test piece placed in hot water reveals whether the curd is ready: properly acidified curd softens and draws into long strands rather than crumbling. The bulk curd is heated, kneaded, folded and stretched until smooth and glossy, then formed into balls or other shapes. Cooling fixes the structure, while light brine seasons the cheese and supports short-term storage.
Cow and water-buffalo milk produce distinct versions. Buffalo milk generally contains more fat and protein, giving mozzarella di bufala a rich flavor, tender structure and conspicuous release of milky whey when cut. Fior di latte is made from cow’s milk and became the more widely available form. The historical development of buffalo dairying in southern Italy is real, but the date and route by which water buffalo arrived there—and whether every early reference describes the modern cheese—remain disputed.
Traditional high-moisture mozzarella is perishable. It was best consumed near production, often unaged and held in its preserving liquid. Refrigeration, sanitary milk handling and faster transport greatly expanded its reach. Industrial production also created firmer, lower-moisture cow’s-milk mozzarella designed to keep longer, shred reliably and melt without releasing excessive water. That product differs substantially from delicate fresh mozzarella.
Mozzarella’s most famous modern role is on pizza, especially after pizza spread internationally during the nineteenth and twentieth centuries. Its appeal there is technological as well as sensory: heated pasta-filata curd melts into cohesive strands and browns while retaining elasticity. Pairing fresh mozzarella with tomatoes also linked an established Italian dairy technique to a crop introduced from the Americas, although tomato became an everyday Italian food only gradually. Thus mozzarella was not itself a creation of the Columbian Exchange, but one of its enduring modern combinations was.

Historical context
Much of southern Italy was governed within the Spanish Habsburg world, while Rome was a major ecclesiastical and publishing center. Bartolomeo Scappi served elite church households, and his 1570 Opera recorded hundreds of dishes, ingredients and kitchen procedures intended for wealthy professional kitchens. Mediterranean trade moved livestock products, spices, grain and preserved foods among cities, but fresh cheese still traveled poorly without refrigeration. American crops were already present in Europe: tomatoes had been described by sixteenth-century botanists, yet they had not acquired their later central place in Italian cooking.
