Cappuccino is a compact Italian coffee drink combining espresso with heated milk and a distinct layer of foam. Its familiar form depended on café machinery: an espresso machine could prepare concentrated coffee rapidly, while boiler steam heated and aerated milk. Early twentieth-century machines did not produce exactly the same espresso or silky microfoam expected today. The drink therefore developed over several decades rather than appearing fully formed in 1900.
The name has an older and less straightforward history than the recipe. Central European cafés served drinks called Kapuziner, a reference to the brown color associated with the robes of Capuchin friars. Earlier Kapuziner preparations could involve coffee, cream, sugar, or spices and should not simply be treated as identical cappuccinos.
In its established Italian form, a barista draws one espresso into a small porcelain cup and steams cold milk, introducing air while creating a smooth texture. The milk is then poured so that hot liquid milk and foam integrate with the coffee while retaining a foamy crown. Exact ratios vary. The often-repeated formula of equal thirds—espresso, milk, and foam—is a useful visual shorthand, not a universal historical rule. Italian servings are generally much smaller than many later international versions and are commonly taken at breakfast, frequently with a cornetto or another pastry.
Technology repeatedly altered the result. Early steam-pressure machines made rapid café service possible, but postwar lever and pump machines produced espresso under conditions closer to the modern standard, including its characteristic crema. Improved steam wands, refrigeration, and barista technique made fresh milk easier to hold safely and texture consistently. These changes transformed cappuccino from a variable café preparation into a repeatable commercial format, although milk type, machine pressure, cup size, and operator skill still affect flavor and structure.
During the later twentieth century, Italian migration, tourism, espresso-machine exports, and international café chains spread the name worldwide. Cappuccinos grew larger in many markets and acquired chocolate powder, cinnamon, flavored syrups, or alternative milks. Contemporary specialty cafés often emphasize glossy microfoam and poured designs, features associated with broader late twentieth-century espresso culture rather than the earliest drink. The enduring idea, however, remains simple: concentrated coffee moderated by warm milk, with foam supplying aroma, insulation, and a visibly crafted finish.

Historical context
Italy had roughly 32 million inhabitants and was urbanizing unevenly, with expanding railways, ports, and industrial cities supporting a growing public café culture. Coffee remained an imported colonial commodity, transported over long maritime trade routes and roasted near consumer markets. Luigi Bezzera's espresso-machine patent followed in 1901, and commercial development accelerated thereafter; the modern cappuccino consequently belongs to the decades after 1900 rather than securely to that single year.
