Espresso is a small, concentrated coffee brewed to order by driving hot water through finely ground, compacted coffee. Its defining history is technological rather than the invention of a wholly new ingredient: coffee had been consumed in Europe for centuries, but the espresso machine reorganized preparation around speed, individual portions, and café service.

The year 1901 marks an important patent by Milanese inventor Luigi Bezzera for improvements to steam-driven coffee machinery. It was not an isolated beginning. Angelo Moriondo had patented an earlier steam machine in Turin in 1884, while Desiderio Pavoni later acquired Bezzera’s patent and helped commercialize machines in Milan. These early devices could prepare coffee rapidly, but they did not operate like modern pump machines. Steam pressure and very hot water could yield a harsher drink, and early equipment often brewed larger quantities or used multiple group heads rather than reproducing today’s standardized shot.

The modern sensory model developed gradually. In the late 1940s, Achille Gaggia’s lever machines used spring-driven pistons to generate substantially greater pressure. This encouraged emulsification of coffee oils and gases, producing the persistent foam now called crema. At first, crema was unfamiliar enough to require promotion. Electric pump machines, especially designs introduced around 1961, subsequently made stable pressure and continuous café operation easier. Modern practice commonly uses water near, but below, boiling temperature and approximately nine bars of brewing pressure, although recipes vary by roast, grinder, dose, basket, and local convention.

Beneath these changes remains the central innovation: pressure, heat, and finely ground imported coffee coordinated to make one concentrated cup on demand.

Historical context

Recently unified Italy had roughly 33 million inhabitants and was industrializing unevenly, with major engineering and manufacturing centers in the north while much of the population remained rural. Railways, urban cafés, gas and electric power, and increasingly capable metal workshops supported new beverage machinery. Coffee itself could not be grown commercially in Italy: every cup depended on long-distance imports from tropical producers operating within global trade systems often shaped by colonial rule and unequal labor relations.
