Chewing gum was not invented in nineteenth-century New York. People in several parts of the world had long chewed plant resins, latexes, and waxes. In Mesoamerica, chicle—the coagulated latex of the sapodilla tree—was chewed before European colonization and remained part of regional practice afterward. In North America, commercial spruce-resin gum appeared by the mid-nineteenth century, followed by paraffin-based products. Thomas Adams therefore entered an existing market rather than creating chewing gum itself.

Adams is commonly said to have obtained chicle through the exiled Mexican politician Antonio López de Santa Anna and to have experimented with it as a rubber substitute. According to later business histories, Adams eventually recognized its potential as chewing gum. The familiar date of 1869 is often attached to this transition, but the chronology is not completely secure; Adams’s chicle-gum business and gum-making machinery are more firmly associated with the early 1870s. Details of the failed-rubber experiment should consequently be treated as a plausible, later-recounted origin story rather than a fully documented laboratory episode.

Chicle production began in the tropical forests of southern Mexico and Central America. Specialized workers, later widely known as chicleros, cut channels into sapodilla bark, collected the flowing latex, and boiled it to remove water. The concentrated material could then be formed into blocks for export. In a factory, gum base was softened with heat, combined with sweeteners and flavorings, kneaded, rolled, and cut into uniform pieces. Mechanization made consistency and volume possible, while wrappers, vending machines, advertising, and expanding retail networks turned a perishable-feeling forest product into a recognizable branded confection.

Early chicle gums could be relatively plain, but manufacturers increasingly added sugar, licorice, fruit, mint, and other flavorings. Adams’s company later marketed prominent products such as Black Jack and Tutti-Frutti, helping move gum from novelty to mass-market habit. Demand created an international chicle economy and difficult forest labor, while intensive tapping could damage trees when poorly managed. The industry’s dependence on a natural latex also exposed it to variable harvests and transport costs.

During the twentieth century, manufacturers increasingly adopted synthetic gum bases, reducing reliance on sapodilla forests and making formulation more uniform. Modern gum may be sugar-sweetened or use polyols and intense sweeteners; its base is normally chewed and discarded rather than swallowed. Sugar-free varieties can stimulate saliva and, when they replace sugared gum, may reduce conditions favorable to tooth decay. Today’s product is therefore both a continuation of an ancient chewing practice and a substantially reformulated industrial confection, with no simple, unbroken technological lineage from Indigenous chicle use to the modern packet.

Historical context

New York was approaching one million inhabitants; the 1870 census counted about 942,000 people. Railways, steamships, mechanized factories, printed advertising, and expanding urban retail networks were reshaping American consumption after the Civil War. Chicle, however, came from sapodilla forests thousands of kilometers away in Mexico and Central America, making the emerging gum business part of a growing trade in tropical raw materials.
