Reconstruction
The domesticated tomato is a crop rather than a finished dish. By the sixteenth century, however, it was already an established food in central Mexico, sold in markets and transformed into seasoned sauces. Spanish observers recorded multiple kinds of tomato and described vendors offering sauces that combined tomatoes with chile and, in some preparations, ground squash seeds. These accounts show culinary diversity, although Nahuatl plant names do not always map neatly onto modern botanical categories.
The crop’s deeper history began with wild tomato relatives native to western South America. Its path to the large-fruited forms encountered in Mesoamerica remains debated. Botanical and genetic evidence supports a complex sequence involving South American ancestors, movement northward, and substantial selection in Mexico, but researchers disagree over where particular stages of domestication occurred and whether some intermediate populations were cultivated, feral, or wild. It is therefore safer to describe Mesoamerica as a major center of diversification and culinary elaboration than as the unquestioned location of the entire domestication process.
Tomatoes could be eaten raw, but their clearest documented role in early colonial descriptions is as an ingredient in sauces. Cooks crushed or ground the fruit with chile and other seasonings, producing accompaniments for maize-based foods and other dishes. The exact recipes varied, and surviving written descriptions were created through colonial observation and translation rather than modern recipe notation. Archaeobotanical remains can establish the presence of tomato-family plants at some sites, but fragile fruits and the difficulty of identifying closely related species limit reconstruction of individual preparations.
Spanish conquest connected this Mesoamerican food system to Atlantic shipping. Tomato seed reached Europe during the sixteenth century, yet adoption was uneven. Europeans recognized the plant’s relationship to other nightshades, some of them poisonous, and initially grew tomatoes as curiosities as well as food. Over time, cultivation and selection produced many regional forms. Tomatoes became especially important in parts of Mediterranean Europe, where they entered sauces, stews, preserves, and eventually industrial canning. This expansion was not an isolated botanical adventure: it occurred within a colonial exchange marked by warfare, epidemic disease, coerced labor, and the appropriation of Indigenous crops and knowledge.
Modern tomatoes range from small cherry types to large slicing and processing cultivars. Fresh-market varieties are selected for appearance, transport, and shelf life, while processing tomatoes emphasize solids, color, and mechanical harvesting. Canning, paste production, refrigeration, and global seed industries have made the fruit available far beyond its original seasons and landscapes. Today’s salsa, bottled ketchup, canned tomato, and Mediterranean tomato sauce are not unchanged survivals from sixteenth-century Mexico, but all depend on a crop whose culinary value was already well understood in the Indigenous Americas before its global dispersal.

Historical context
Central Mexico was being violently reorganized after the 1521 fall of Tenochtitlan. The former island capital—whose pre-conquest population is commonly estimated in the broad range of roughly 100,000 to 200,000 or more—was becoming colonial Mexico City amid warfare, forced labor, and devastating epidemics. Indigenous farmers still supplied urban markets through intensive cultivation, including productive chinampa districts. Regular Atlantic crossings now moved plants, animals, pathogens, and people between the Americas, Europe, and Africa, initiating biological exchanges whose consequences extended far beyond any single voyage.
