Cahokia’s Maize Metropolis

Reconstruction

Around 1050 CE, communities in the American Bottom—the broad Mississippi River floodplain opposite present-day St. Louis—were reorganized on an extraordinary scale. Cahokia expanded rapidly into the largest known pre-Columbian settlement north of Mexico. Its residential districts, plazas and approximately 120 earthen mounds once extended across roughly 1,600 hectares. Estimates vary, but the central settlement may have held about 10,000–20,000 people at its eleventh- and twelfth-century peak, while the surrounding Cahokian region supported many more.

Food made this concentration possible, although Cahokia was not simply a city built on maize. Directly dated maize remains and carbon-isotope evidence indicate that substantial maize consumption began in the American Bottom around 900 CE and intensified afterward. Farmers also maintained an older, diverse agricultural system. Archaeobotanical deposits contain domesticated chenopod, sunflower, squash and sumpweed, alongside cultivated maygrass, erect knotweed and little barley. People gathered hickory nuts, walnuts, acorns, persimmons, grapes, plums and berries. Fish, waterfowl, turtles and mammals—especially white-tailed deer—supplemented plant foods.

Deposits beneath Mound 51 offer unusually vivid evidence of public eating between approximately 1050 and 1100. A large borrow pit near the Grand Plaza was filled through successive dumping events with broken cooking vessels, animal bones, charred plants and other materials. Archaeologists interpret these layers as the refuse of large gatherings or feasts. At least 30 identified or probable food plants were represented. Maygrass and other native seed crops were conspicuous, while maize occurred at relatively low density. The assemblage therefore cautions against reconstructing every Cahokian ceremony as a corn feast.

Spot something wrong in this reconstruction?

Exact recipes are unknown because Cahokia left no written cookbooks. Pots, hearths and grinding implements establish that boiling, parching, pounding and grinding were available, but assigning a particular method to every recovered species would be reconstruction. Emerging archaeological research indicates that some maize in the greater Cahokia area underwent alkaline processing, the family of techniques now called nixtamalization, although its prevalence and precise procedures remain under study. Dried grain and seeds could also be stored, allowing farmers to support dense populations and major construction projects beyond the harvest season.

Food was socially consequential as well as nourishing. Public meals helped assemble participants in Cahokia’s plazas, while isotope results from Mound 72 indicate unequal access to maize and animal protein among differently treated burial groups. Immigration also shaped the metropolis: strontium-isotope analysis identified many sampled individuals as nonlocal. After 1200, population declined amid political change and greater hydrological instability; no single cause of abandonment is established. Cahokia’s clearest modern food legacy is not one traceable recipe but evidence that Indigenous North American urbanism rested on sophisticated farming, storage, landscape knowledge and a crop diversity extending far beyond maize.

Historical context

Cahokia stood within a densely connected Mississippian world of mound centers, villages and farmsteads linked through the Mississippi and its tributaries. At its peak around 1050–1150 CE, the settlement covered roughly 1,600 hectares, contained about 120 mounds and may have housed 10,000–20,000 residents. Isotope evidence indicates that a substantial share of sampled people had grown up outside the American Bottom. The city developed during centuries with relatively few very large Mississippi floods; high-magnitude flooding became more frequent after about 1200, overlapping with regional reorganization and population decline.

ModerateHuman and animal stable-isotope analyses strongly support changing maize consumption, dietary variation and migration. Experimental and emerging archaeological evidence supports alkaline maize processing in the region, but its prevalence at Cahokia remains under study.
