Katsuobushi is bonito preserved so thoroughly that a finished piece resembles a block of dark wood. It is most often made from skipjack tuna, Katsuwonus pelamis, although terminology and raw material can vary. Cooks shave the hard loins into thin flakes and use them as a garnish or steep them briefly to make dashi, the savory stock underlying many Japanese soups, sauces, and simmered dishes.
The food did not appear fully formed around 1500. Written evidence indicates that Japanese people had preserved bonito by drying it many centuries earlier. Those products were not necessarily identical to modern katsuobushi. The more elaborate sequence of simmering, repeated smoking, drying, and—in premium forms—controlled mold curing developed gradually during the early modern period. Traditional stories sometimes credit particular seventeenth-century producers with decisive innovations, but precise personal attribution is uncertain. It is safer to describe modern-style katsuobushi as the result of accumulated coastal processing knowledge.
Production begins by heading, gutting, and filleting the fish into long sections. The pieces are gently simmered, after which bones, skin, and damaged flesh are removed. They are then smoked repeatedly over hardwood fires, with resting periods that allow moisture to migrate outward. This produces arabushi, a smoked and dried form that can already be shaved and eaten. For karebushi and honkarebushi, processors trim the surface and encourage beneficial molds to grow between cycles of drying, sunning, and brushing. These molds help remove moisture and alter aroma, but accounts that reduce the process to a single microbe oversimplify a variable craft ecology.
The finished product is protein-dense, lightweight, and relatively stable when kept dry. These qualities allowed fishing districts to supply castle towns and growing cities, especially during the Edo period. In the kitchen, shavings release inosinate, which acts synergistically with glutamate from kombu. The resulting stock delivers strong savoriness without requiring large pieces of fish in each bowl. Katsuobushi consequently became important to dishes ranging from miso soup and noodle broth to tofu garnishes and okonomiyaki.
Industrial cutters, temperature-controlled smoking, packaged flakes, powdered stock, and extract-based seasonings have made its flavor easier to distribute. Whole cured blocks and hand planes nevertheless remain in specialist and domestic use. Modern production also exposes a historical tension: preservation turned seasonal catches into durable value, but large-scale demand depends on marine fisheries and fuel-intensive processing. Katsuobushi today is therefore both a living craft food and an industrial flavor ingredient, carrying an early modern preservation system into contemporary kitchens.

Historical context
Japan was in the late Muromachi and Sengoku eras, when competing military houses controlled fragmented territories and warfare repeatedly disrupted agriculture and transport. Kyoto remained an important cultural center, while port communities connected the archipelago to trade with China, Korea, and Southeast Asia. Coastal fishing and the movement of dried or salted seafood supplied inland consumers, but the highly organized urban markets associated with the later Tokugawa period had not yet fully developed. The year 1500 fits the long history of dried bonito, not a securely dated invention of the modern smoked and mold-cured product.
