Monosodium Glutamate Is Commercialized

In 1908, Kikunae Ikeda, a professor of physical chemistry at Tokyo Imperial University, identified glutamate as the principal source of the distinctive savory taste of kombu dashi. Glutamic acid itself was already known to chemistry, so Ikeda’s achievement was not the discovery of the molecule. Rather, he connected its soluble salts with a recognizable taste quality that did not fit neatly into the conventional categories of sweet, sour, salty, and bitter. He called that quality umami and sought to turn it into an economical seasoning.

Ikeda extracted and crystallized glutamate from kombu broth, studied which glutamate salt tasted best, and selected monosodium glutamate because it was soluble and comparatively palatable. In 1908 he obtained Japanese Patent No. 14805 for manufacturing a seasoning composed principally of a glutamate salt. He then worked with chemical entrepreneur Saburosuke Suzuki II to move from laboratory identification to industrial production. The product was marketed as AJI-NO-MOTO, meaning roughly “essence of taste,” and officially launched in Japan on May 20, 1909.

The first commercial process did not depend on harvesting enormous quantities of kelp. Instead, workers at the Zushi factory in Kanagawa Prefecture separated gluten from wheat flour and heated it with hydrochloric acid in acid-resistant ceramic vessels. Hydrolysis broke the protein into its constituent amino acids. Glutamic acid hydrochloride was crystallized, purified, neutralized with sodium bicarbonate, decolorized, concentrated, and dried. The first successful commercial batch, made in March 1909, was a light-brown powder of about 85 percent purity. This was difficult, laborious chemical processing rather than the simple concentration of dashi.

MSG allowed cooks and manufacturers to add a consistent glutamate taste without preparing a long-simmered stock or relying entirely on variable fermented, dried, or fresh ingredients. It did not create umami: kombu, tomatoes, cheeses, soy sauce, meat, mushrooms, and many other foods already supplied glutamate. Its novelty was portability, concentration, standardization, and compatibility with factory production. Company records document sales expanding beyond Japan during the following decade, although the cultural reception and uses of MSG differed considerably among markets.

Production changed profoundly after Japanese researchers developed microbial glutamate fermentation in the 1950s. Modern manufacturers generally feed sugars or starch-derived carbohydrates to selected bacteria, recover the glutamic acid they release, and convert it to its sodium salt. This transition reduced dependence on protein hydrolysis and helped make MSG a high-volume global seasoning. Ikeda’s commercialization therefore links traditional dashi, modern taste chemistry, patent-based entrepreneurship, and the industrial capacity to reproduce a familiar sensory effect at large scale.

Historical context

Japan was nearing the end of the Meiji period, an era of rapid state-directed industrialization, expanding scientific education, factory growth, and imperial power following the Russo-Japanese War of 1904–1905. Japan proper had an estimated population of about 48.0 million in 1908 and 48.6 million in 1909. Tokyo Imperial University trained specialists who could connect European-derived chemistry with Japanese materials and culinary practices. Household cookbooks were proliferating, while railways, steamships, branded packaging, patents, and national markets made it increasingly practical to manufacture and distribute standardized foods and seasonings.
