Maldive fish is intensely dried tuna produced in the Maldives and traded especially to Sri Lanka and southern India. It is less a ready-to-eat dish than a preserved ingredient: firm, dark pieces of fish are shaved, pounded, or grated into other foods. In Sri Lanka, where it is known as umbalakada, it supplies concentrated savory flavor to sambols, curries, and vegetable preparations. In parts of southern India, related traded tuna is called masi and used in regional dishes.
The preservation method answered an island problem. Tuna was plentiful offshore but deteriorated quickly in tropical heat, while the Maldives had limited agricultural land and depended heavily on exchange. Fishers commonly targeted skipjack tuna, although the species used in every historical period cannot be demonstrated. After cleaning the catch, processors separated substantial pieces of flesh, cooked them—often described as boiling in salted water—then smoked and repeatedly sun-dried them. Moisture loss, heat, smoke, and salt reduced spoilage and produced hard pieces capable of surviving storage and maritime transport.
The year 1200 should be treated as an approximate historical placement, not a documented invention date. Medieval Indian Ocean merchants already moved goods along monsoon routes joining island societies with Sri Lanka, India, Arabia, and Southeast Asia. The Maldives exported marine and island products, most famously cowrie shells as well as preserved fish. Firm evidence for the precise beginning and scale of the fish trade is thinner than evidence from later written accounts and the continuing culinary tradition. The technique may be older, but an exact origin cannot presently be assigned.
At its destinations, Maldive fish functioned as both protein and seasoning. Because drying concentrated flavor, a small amount could enrich foods based on coconut, vegetables, or starch. The arrival of American chili peppers after the sixteenth century changed many preparations in which the fish later became prominent, particularly hot Sri Lankan sambols. Modern recipes therefore should not be projected unchanged into the medieval period. Coconut, onions, lime, and chili in present-day accompaniments reflect particular regional recipes and ingredient histories rather than the original composition of the preserved fish itself.
Maldive fish remains commercially produced, although refrigeration, motorized boats, mechanized cutting, and regulated markets have altered the food system around it. Its enduring importance lies in the conversion of a seasonal, highly perishable ocean catch into a compact commodity. That transformation connected Maldivian fishing labor to distant kitchens and created a distinctive taste that survives even where fresh fish is readily available.

Historical context
Indian Ocean sailing depended on predictable monsoon winds, allowing merchants to cross hundreds or thousands of kilometers between island ports, Sri Lanka, India, Arabia, and Southeast Asia. The Maldives had entered the Islamic world by the later twelfth century and occupied a strategic position southwest of India, but their small coral islands offered little land for cereal agriculture. Fishing, coconut cultivation, seafaring, and exports such as cowrie shells helped sustain exchange with larger agrarian societies. China was under the Southern Song dynasty, while political power in southern India was shifting among major regional kingdoms.
