Reconstruction
Chili peppers were American crops before they became fixtures of Asian cooking. Archaeological starch grains and plant remains demonstrate that Capsicum had been cultivated and eaten across parts of the Americas for millennia before European contact. After 1492, viable seeds crossed the Atlantic and then moved through commercial, colonial, diplomatic, and informal exchanges. Unlike black pepper, chilies did not have to remain a costly imported spice: farmers could save their seeds and reproduce them in many tropical and subtropical environments.
Goa is a defensible symbol of this movement rather than a proven single point of introduction. Portugal secured the port in 1510 and used it within a maritime network extending to eastern Africa, the Persian Gulf, Malacca, China, and Japan. Spanish shipping through Mexico and Manila supplied another possible route into maritime Asia. Historical research supports several overlapping pathways involving European ships, Asian merchants, soldiers, missionaries, gardeners, and local cultivators. The identity of the person or shipment that first brought Capsicum to India cannot be established securely.
Before chilies, South Asian cooks already produced pungency with black pepper, long pepper, ginger, mustard, and other spices. Capsicum offered a different combination of intense heat, color, productivity, and ease of preservation. Fruits could be eaten green, dried for storage, ground, fried in oil, or incorporated into pickles and wet condiments. Seventeenth-century observers described their use in Bengal, Java, and elsewhere, although surviving evidence rarely permits reconstruction of the earliest recipes. The exact chronology for Thailand and much of Southeast Asia therefore remains less certain than the broad fact of early-modern diffusion.
East Asian evidence shows that arrival did not mean immediate culinary dominance. A Chinese text from 1591 describes the foreign pepper primarily as an attractive garden plant. A Japanese diary mentions it in 1593, and Capsicum seeds have been recovered from a late-sixteenth- to seventeenth-century Japanese site. A Korean encyclopedia published in 1614 reports a pepper associated with Japan. These records establish early presence, but the transformation of regional cuisines continued afterward. Chilies became prominent in southwestern Chinese food considerably later, while the now-familiar red forms of Korean fermented pastes and kimchi developed gradually rather than appearing fully formed by 1650.
The enduring change came through local selection and incorporation. Asian growers developed varieties suited to different climates, levels of pungency, and methods of drying or fermentation. Cooks placed them within existing systems of curries, relishes, pickles, sauces, and preserved vegetables. Modern sambal, nam phrik, gochujang, chili-rich kimchi, and Sichuan cooking are not unchanged sixteenth-century survivals. They are later regional creations made possible by one of the Columbian Exchange's most consequential crop transfers.
Historical context
Portuguese forces captured Goa in 1510 and Malacca in 1511, placing themselves at strategic points within older Indian Ocean and Southeast Asian trading systems. The Spanish establishment of Manila in 1571 connected American silver and crops with Asian commercial networks across the Pacific. Mughal India, Ming China, the Ayutthaya kingdom, and Joseon Korea remained powerful societies whose merchants and cultivators actively adapted imported plants. Oceanic empires could move seeds between continents, but local farmers, markets, and existing regional trade routes determined whether those crops survived and entered everyday food.

ModerateArchaeological starch evidence strongly establishes pre-contact Capsicum use in the Americas, and late-sixteenth- to seventeenth-century Capsicum seeds have been reported from Japan. Comparable direct archaeobotanical evidence has not been established here for the initial introduction at Goa or across Asia as a whole.

Historical interpretation
ModerateTrade networks, easy seed propagation, broad environmental adaptability, and local cultivation plausibly explain rapid diffusion. The relative importance of Portuguese, Spanish, Arabian, and intra-Asian routes differs by region and remains partly disputed.
