Pan de cristal is a modern Catalan wheat bread built around an extreme proportion of water. Bakery histories commonly attribute its commercial development in 2004 to baker Jordi Nomen, although the exact chronology rests largely on industry accounts and should be checked against contemporary business records. The name, meaning “glass bread,” describes the finished structure: a very thin, brittle crust surrounds a delicate web of enormous, irregular holes whose walls can appear translucent. It should not be confused with coca de vidre, a thin Catalan sweet flatbread commonly finished with sugar and sometimes anise.

The basic ingredients are bread flour, water, yeast or another leaven, and salt; some formulas include olive oil. Hydration commonly approaches or exceeds the weight of the flour, making the raw dough closer to a trembling gel than to a conventional kneadable loaf. Exact percentages vary by bakery, and commercial producers may use flour improvers or other processing aids. Strong wheat flour is important because its gluten network must retain gas despite the abundance of water.

Pan de cristal is frequently split, toasted, and rubbed with ripe tomato, then dressed with olive oil and salt in the manner of pa amb tomàquet. Its crisp surface also supports cured meats, cheeses, anchovies, or restaurant toppings without producing the dense bite of a thicker slice. The bread’s fragility is part of its appeal, but it also means freshness, careful packaging, and reheating matter greatly.

The style spread through restaurants, specialist bakeries, frozen bakery distribution, and home-baking communities. Modern versions range from short-ingredient artisan loaves to standardized commercial products, so the bread should not automatically be considered ultra-processed simply because it emerged in the twenty-first century. Its wider significance is technical and cultural: it turned very high hydration, once difficult to handle consistently, into a recognizable commercial identity. It also shows how modern bakery equipment, stronger flours, temperature control, and distribution can create a supposedly rustic bread whose form depends on precise contemporary production.
