Processed cheese is not simply natural cheese melted and allowed to cool. In its mature industrial form, it is made by grinding or shredding one or more cheeses, blending them under heat, and usually adding emulsifying salts that help water, milk proteins, and fat remain evenly dispersed. The hot mixture can then be formed into blocks, spreads, or individual slices. Compared with many natural cheeses, it offers a more uniform flavor, predictable melting, and longer storage.

James L. Kraft’s United States patent, issued in 1916, was an important step in the American commercialization of the category. It described treating cheese with heat while manipulating it into a homogeneous mass, with preservation as a central objective. Kraft’s business subsequently sold processed cheese in sealed packages and helped establish it as a nationally distributed product. The patent is direct evidence for his particular method, but it should not be treated as the uncontested invention of processed cheese. Swiss experimenters Walter Gerber and Fritz Stettler had produced a stable processed cheese using Emmental and an emulsifying salt in 1911. Modern processed cheese therefore emerged through several related European and North American developments rather than a single isolated discovery.

Production begins with natural cheese, whose casein proteins and fat may separate when heated. Emulsifying salts—commonly phosphates or citrates in later formulations—alter protein interactions and allow the proteins to bind water and surround fat droplets. Heat, agitation, and controlled moisture then create a smooth emulsion. Early commercial products were packed in jars, tins, or loaves; later machinery made wrapped portions and thin slices possible. Formulas also diversified into legally distinct products containing different proportions of cheese, milk ingredients, water, seasonings, and permitted additives.

Its stability suited an expanding industrial food system. Manufacturers could combine batches, reduce variation, transport cheese over long distances, and supply institutions with a product that behaved consistently in cooking. Processed cheese became associated with sandwiches, military and institutional meals, cheeseburgers, sauces, and inexpensive home cooking. Individually wrapped slices, especially prominent after the mid-twentieth century, made portioning exceptionally easy.

The category’s modern significance lies as much in standardization as in preservation. It helped redefine consumer expectations: cheese could be mild, identical from package to package, and engineered to melt without releasing a pool of oil. Current products range from preparations made predominantly from natural cheese to softer spreads and formulations with additional dairy ingredients. Nutritionally, they can provide protein and calcium, but many are high in sodium and saturated fat. Their history illustrates both sides of industrial processing—greater consistency, convenience, and distribution alongside heavier formulation and diminished local variation.

Historical context

The United States had roughly 102 million inhabitants, and Chicago—Kraft’s business base—was a food-processing and transportation center of about 2.5 million people. Refrigerated railcars, mechanized dairies, commercial canning, and expanding cold storage were turning regional farm products into national commodities. Europe was engulfed in the First World War, increasing institutional demand for foods that could be transported, portioned, and stored reliably; the United States would enter the war in 1917.
