Sambar is a sour, seasoned pulse-and-vegetable stew associated especially with the cuisines of Tamil Nadu and neighboring parts of southern India. Its usual foundation is split pigeon pea, or toor dal, cooked until soft. Tamarind supplies acidity, while vegetables may include eggplant, drumstick pods, okra, gourds, onions, shallots, tomatoes or roots. The combination is not fixed: consistency, sourness, sweetness and the proportion of dal vary substantially among regions, communities and individual households.
The dish is securely part of South Indian food history, but a precise invention in 1700 cannot be demonstrated. A final tempering—mustard seed and often fenugreek, dried chile, asafoetida and curry leaves fried briefly in oil—adds aroma and distributes fat-soluble flavors. Coriander seed, cumin and dried chile commonly appear in ground mixtures, but a standardized commercial “sambar powder” belongs mainly to a later market economy. Earlier cooks would have used household, community or regional spice combinations. Chile itself was a post-Columbian arrival in India and had become deeply integrated into South Indian cooking by the early modern period.
Sambar is commonly eaten with rice, sometimes alongside vegetable dishes, pickles, yogurt or crisp papad. It also became a defining accompaniment to idli, dosa, vada and other tiffin foods. These pairings helped it move from household meals into temple-linked dining, eating houses, railway refreshment rooms and restaurants. Urbanization, migration and packaged spice powders subsequently carried recognizable versions throughout India and overseas.
Its importance lies partly in flexibility. Pulses contribute protein and body, tamarind brightens otherwise mild staples, and seasonal vegetables can be incorporated into one economical pot. Modern restaurant sambar may be thinner, sweeter or more uniform than household versions, while regional forms retain distinctive ingredients and spice balances. There is therefore no single historically authentic recipe: present-day sambar represents a family of related preparations shaped by local produce, caste and community practices, commercial catering and changing access to spices.

Historical context
The fertile Kaveri delta supported intensive wet-rice cultivation and major temple and court centers. Thanjavur had recently passed from Nayaka to Maratha rule, creating a multilingual political environment in which Tamil, Telugu, Marathi and Sanskrit traditions interacted. Indian Ocean trade connected southern ports with Sri Lanka, Southeast Asia, the Persian Gulf and European trading companies. American crops introduced through sixteenth-century maritime exchange—notably chile peppers—were being incorporated into established food systems based on rice, pulses, tamarind, oilseeds and locally grown vegetables.
