Soju is not one unchanging beverage. Historically, the name referred to Korean liquor concentrated by distillation; today it also encompasses a much lighter commercial drink made by diluting highly purified neutral spirit. That distinction explains why an aromatic, sometimes powerful grain distillate and an inexpensive green-bottle beverage share the same name.

Distillation was established in Korea during the late Goryeo period, when Mongol conquest and the Yuan imperial system connected the peninsula more closely with technologies circulating across Eurasia. Korean tradition commonly associates the new method with Mongol forces and centers such as Gaegyeong and Andong. The broad thirteenth- to fourteenth-century setting is credible, but an exact introduction in 1300 and a single route or inventor are not securely documented. Later written evidence supports soju’s presence, while specific origin stories remain historical reconstruction.

Traditional production began with grain—often rice, although wheat, barley, millet, or other starches could be used. Nuruk, a molded fermentation starter containing microorganisms and enzymes, converted grain starch into fermentable sugars while yeasts produced alcohol. Makers fermented the mash and heated it in a pot apparatus commonly called a sojugori. Alcohol-rich vapor rose from the heated vessel, condensed, and emerged as clear spirit. Ingredients, still design, separation of the distillate, maturation, and dilution varied by household and region, producing spirits with markedly different strength and aroma. Distillation required grain, fuel, equipment, and skill, so distilled liquor was generally more resource-intensive than everyday fermented drinks such as makgeolli.

The greatest transformation came in the twentieth century. Industrial producers could make nearly neutral ethanol efficiently from varied starch sources and dilute it with water, then filter and lightly sweeten the result. During grain shortages, South Korean policy in 1965 restricted the use of rice for distilled liquor, accelerating the dominance of diluted soju. Although those restrictions were later removed, mass-market diluted soju remained inexpensive, consistent, and increasingly lower in alcohol than many traditional versions. Craft and regional producers, including makers of Andong-style soju, continued or revived grain fermentation and pot distillation.

Modern soju is commonly poured into small glasses and consumed with shared food, often with age- and status-conscious etiquette governing pouring and receiving. It has become an internationally recognizable Korean beverage, but its social importance has a harmful counterpart: low price, wide availability, and norms encouraging repeated rounds can promote hazardous alcohol consumption. Contemporary soju therefore preserves a medieval distillation legacy only in part; its dominant form is equally a product of industrial alcohol, scarcity policy, branding, and modern drinking culture.

Historical context

Korea was ruled by the Goryeo dynasty under strong Mongol-Yuan political influence following decades of invasion and negotiated submission. Yuan imperial routes linked East Asia with Central and western Eurasia, allowing military personnel, merchants, administrators, and technical knowledge to travel unusually long distances. Distillation was already known elsewhere in Eurasia, but the precise path by which beverage distilling became established in Korea remains uncertain. Most Koreans still consumed fermented grain drinks; distilled liquor demanded additional fuel, apparatus, and valuable grain.
