Baijiu is not one fixed recipe but a broad family of Chinese distilled grain spirits. Its defining production feature is usually solid-state or semi-solid fermentation: steamed grain is inoculated with qu, a microbial starter containing molds, yeasts, and bacteria, then fermented before the moist grain itself is distilled. Modern examples commonly range from about 40 to 60 percent alcohol by volume, although weaker and stronger products exist.

Chinese people had made fermented grain beverages for millennia before distilled liquor became widespread. Distillation’s chronology is less secure. Apparatus interpreted as distilling equipment survives from earlier periods, but identifying what it produced—and whether it made drinkable spirits—is disputed. Written and material evidence becomes clearer around the Song-Yuan transition and Yuan period, when distilled liquors known by terms such as shaojiu appear increasingly visible. The year 1300 is therefore a useful approximation for emergence, not a documented invention date. The modern category name baijiu should also be applied cautiously to medieval drinks.

Production varied by ecology and local grain supplies. Sorghum eventually became especially important in northern and southwestern traditions, while rice, glutinous rice, wheat, millet, barley, peas, and, after its arrival in China, maize could be used alone or in blends. Large bricks of daqu commonly supported robust, aromatic fermentations; other starter types developed for different regional products. Workers steamed grain, cooled and inoculated it, and fermented it in earthen pits, jars, cellars, or heaps according to local practice. Steam driven through the fermented solids carried volatile alcohol and aroma compounds into a condenser. Producers might then store, select, and blend distillates. Long aging was not universal, and modern marketing claims about age require separate verification.

Repeated use of fermentation spaces created stable workshop ecologies. In famous pit-fermented styles, microorganisms living in cellar mud help generate the acids and esters responsible for powerful aromas. Other traditions favor cleaner, lighter, rice-like, or sauce-associated profiles. These differences eventually became organized into modern “aroma style” classifications, which should not be projected unchanged into the Yuan period.

Strong grain liquor became embedded in banquets, ancestral offerings, commercial hospitality, festivals, and ceremonial toasting. Distillation concentrated value and alcohol into a portable product, while also creating opportunities for taxation and regulation. Baijiu remains central to many formal and family occasions in China, but its social importance has a harmful side: coercive toasting, intoxication, dependence, and adulteration have all accompanied its consumption. Today’s industrial brands preserve solid-state fermentation and blending alongside mechanization, laboratory quality control, standardized bottling, and nationwide distribution.

Estimates represent an unsweetened distilled baijiu at approximately 40–60% alcohol by volume. Alcohol strength, residual sugars, flavor additions, density, and serving size vary substantially among products. Historical compositions cannot be reconstructed precisely.

Historical context

The Yuan dynasty governed a politically unified China within the wider Mongol imperial world. Long-distance routes linked Chinese cities with Central and western Asia, facilitating movement of merchants, technicians, commodities, and practical knowledge, although a direct foreign origin for Chinese grain distillation remains debated. China possessed large cities, commercial grain markets, paper money, advanced ceramics, and extensive transport networks. Fermented grain drinks were already ancient; distilled liquor entered this established drinking culture gradually rather than replacing it at once.
