Beiju belongs to a broad Indigenous Brazilian complex of cassava foods rather than to a single fixed recipe. When Europeans reached the Brazilian coast around 1500, Indigenous communities already cultivated cassava and possessed the specialized knowledge needed to transform its roots into safe, durable foods. Early colonial descriptions identify cassava breads or cakes, but they do not establish that the modern white tapioca crepe existed in precisely its present form.
The essential technology addressed cassava’s central difficulty: many varieties contain cyanogenic compounds that can release toxic hydrogen cyanide. Portuguese writers used beiju for multiple Indigenous cassava preparations. “Tapioca,” derived from a Tupi-related term, became associated with cassava starch and starch products, but its meaning has varied. Consequently, historical beiju should not automatically be equated with today’s beiju de tapioca. The modern version is generally made from hydrated cassava starch or commercially prepared tapioca gum. Granules are sifted into a hot, dry pan, where heat gelatinizes their surfaces and binds them into a pale, flexible disk. The crepe is commonly folded around coconut, queijo coalho or other cheese, dried meat, eggs, chocolate, or sweetened condensed milk, although a plain salted version remains possible.
Cassava processing mattered well beyond one dish. It converted a productive tropical root into flour, starch, bread, beverages, and portable provisions. Colonists adopted Indigenous knowledge while colonial expansion, enslavement, and plantation economies violently disrupted the communities that developed it. Cassava subsequently crossed the Atlantic and became a major crop in Africa and parts of Asia, although local processing traditions developed in their own directions.
Today’s tapioca crepe preserves the underlying principles of starch separation, hydration, sieving, and griddle cooking, while commercial starch makes the work far quicker. Its continuity is therefore technological and ingredient-based, not proof of an unchanged recipe since 1500. Beiju remains a visible expression of Indigenous food knowledge within Brazilian cuisine, even as modern fillings, packaged starch, urban vending, and restaurant presentation have continually reshaped it.

Historical context
Coastal Brazil was home to numerous Indigenous societies linked by travel, exchange, warfare, and linguistic networks; no reliable population total exists, though estimates for the territory later called Brazil extend into the millions. Portuguese landfall in 1500 initiated sustained Atlantic contact, followed by extraction, missionization, enslavement, epidemic disease, and settlement. Cassava was already a domesticated staple in tropical South America, supported by sophisticated grating, pressing, fermenting, and griddle-cooking technologies. During the following centuries, Portuguese shipping carried cassava planting material and processing knowledge across the Atlantic, helping establish the crop in Africa.
