Casabe is a thin, usually crisp flatbread made from grated cassava. Europeans described it in the Caribbean immediately after their arrival in 1492, but that date marks written observation, not invention. Indigenous peoples had already developed cassava cultivation and the specialized processing needed to transform its roots into durable food. The tradition is particularly associated with Taíno and other communities of the Caribbean and with related cassava-processing cultures across northern South America.
The classic raw material is bitter cassava, a productive tropical crop whose tissues contain cyanogenic compounds. Safe preparation therefore depends on learned technique rather than simple cooking. Roots are peeled and finely grated into pulp. The wet mass is then squeezed—traditionally in a woven, extensible press in many communities—to expel liquid. The drier meal is broken up or sieved and scattered evenly over a heated griddle. As it cooks, the particles bind into a broad disk. Turning and further drying produce bread that may be eaten fresh but is especially valued when crisp and shelf-stable. Exact tools, thickness, and final texture differ among regions, and some modern casabe is made with mechanized graters or presses.
This was more than a recipe. Cassava tolerates relatively poor soils and irregular rainfall, while the finished bread stores and travels better than the highly perishable fresh root. Casabe could therefore support households, journeys, exchange, and later colonial provisioning. Spanish colonists adopted it where wheat was difficult or expensive to grow, and it became useful aboard ships and in settlements. Adoption did not make the colonial food system benign: Indigenous demographic collapse, coerced labor, African enslavement, and plantation expansion profoundly changed Caribbean farming and the people responsible for producing staple foods.
Casabe differs from a leavened loaf. It normally contains no wheat flour, yeast, or added fat, and its structure comes from heated cassava starch rather than gluten. Its austere ingredient list can obscure the expertise required to detoxify and preserve the root. Inadequate processing of cyanogenic cassava is dangerous; safe production relies on suitable varieties and the full sequence of peeling, grating, pressing, heating, and drying as practiced by knowledgeable makers.
Today casabe survives in household, artisanal, and commercial forms, sometimes served with soups, stews, fish, meat, or spreads. Packaging and mechanization have expanded its market, while modern versions may vary in thickness or include flavorings. Recognition of the shared living tradition across Caribbean and Latin American communities emphasizes that casabe is not simply an artifact recorded by Europeans. It remains a continuing body of agricultural, technical, and culinary knowledge rooted in Indigenous food culture.

Historical context
The Caribbean contained numerous Indigenous communities linked by canoe travel, exchange, kinship, and warfare. Cassava, maize, sweet potatoes, peppers, fish, and cultivated or gathered fruits supported varied local diets. Columbus's first voyage in 1492 opened sustained Atlantic contact; within a few years, Spanish settlements, epidemic disease, tribute demands, and forced labor began catastrophically transforming island populations and their food systems. Wheat remained culturally important to Europeans, but tropical conditions made Indigenous staples such as cassava indispensable to early colonial survival.
