Drinking milk depends on a genetic accident: adults who keep producing lactase, a trait that spread in Europe and East Africa only after herding began. Pottery from Anatolia and the Sahara carries dairy fats from the seventh millennium BCE — mostly from soured and fermented milks, which are digestible without that mutation. The fresh glass of milk is the late, local version.
