In 1867, Henri Nestlé began selling Farine Lactée Henri Nestlé from Vevey, Switzerland. The manufactured infant food combined cow’s milk, wheat flour, and sugar in a preparation intended to be mixed with water. It addressed a grave practical problem: how to nourish an infant when breastfeeding failed, the mother had died, or a wet nurse was unavailable. Contemporary substitutes such as animal milk, cereal pap, or bread soaked in liquid were nutritionally inconsistent and easily contaminated. Nestlé’s packaged product promised convenience, regularity, and longer storage.

Farine Lactée was not the first scientific or commercial breast-milk substitute. Just before it, chemist Justus von Liebig had publicized a “soluble food for babies” made from milk and processed cereal ingredients. Nestlé’s achievement lay less in inventing artificial feeding than in producing, branding, and distributing an easily prepared milk-and-cereal food on an expanding commercial scale. Accounts connecting its launch to the recovery of a premature or sick infant helped establish the product’s reputation, although such promotional narratives should not be treated as controlled medical evidence.

Manufacture involved treating wheat flour so that its starch became easier for infants to digest, then combining it with milk and sugar into a shelf-stable preparation. Exact early factory methods and proportions are not consistently available, and the formulation changed as production expanded. The resulting food was closer to a sweetened infant cereal or milk food than to modern infant formula. It was mixed according to printed directions and fed by spoon or bottle, both of which required clean water and utensils that many households lacked.

Industrial infant food had mixed consequences. Standardized packaging could reduce some uncertainties of household recipes, and it gave families an option in genuine feeding emergencies. At the same time, artificial feeding remained hazardous where water supplies were polluted, bottles were difficult to clean, or expensive powder was over-diluted. Advertising could also undermine breastfeeding. These risks fell especially heavily on working-class families and communities reached by aggressive international marketing but not by reliable sanitation or medical guidance.

Farine Lactée helped establish a global industry linking dairying, grain processing, preservation, branding, pharmacy sales, and pediatric advice. Later products increasingly removed cereal, adjusted the balance of protein, fat, carbohydrate, vitamins, and minerals, and adopted stricter microbiological controls. Modern powdered infant formula therefore descends from the same industrial effort to make infant feeding storable and measurable, but it is not nutritionally identical to Nestlé’s cereal-based food. The continuing significance is double-edged: manufactured substitutes can be lifesaving when appropriately made and used, yet safe preparation, truthful marketing, affordability, and protection of breastfeeding remain essential.

Historical context

European railways and steamships were accelerating the movement of milk products, grain, machinery, packages, and branded foods. Industrial cities were growing faster than sanitation systems, and infant mortality in many urban populations remained extremely high. Germ theory was gaining scientific support, but routine household pasteurization, sterile feeding equipment, modern vitamin knowledge, and regulated infant-formula standards still lay in the future. Switzerland’s dairying economy and access to expanding European transport and commercial networks provided favorable conditions for preserved milk foods to become international products.
