Such public presentations are modern expressions of an older domestic food practice, not evidence that every ceremonial use has remained unchanged since 1800.
Fermentation once helped households manage fresh milk without mechanical refrigeration, extending usability while producing a valued flavor rather than merely rescuing surplus. Historical context
Most communities in the East African interior lived beyond direct European colonial rule, combining herding, cultivation, exchange, and seasonal movement according to local ecology.
