Later urban dairies and, eventually, industrial processors narrowed some meanings by selling standardized products under stable commercial names.
Today’s refrigerated laban is usually produced from pasteurized milk inoculated with selected bacterial cultures. Controlled temperature, homogenization, and cold storage give it a consistency unavailable to most medieval households. Yet the central operation remains recognizable: bacteria acidify milk, producing a refreshing food that may be drunk alone or served beside rice, bread, vegetables, and meat. The continuity lies in the fermentation technique and social role, not in proof of one fixed recipe surviving unchanged for a millennium.

Historical context
Damascus and other cities of the Islamic world stood within extensive networks linking Mediterranean ports, Mesopotamia, Arabia, Central Asia, and the Indian Ocean. Most milk nevertheless moved locally because it spoiled quickly and was costly to transport. Sheep, goats, cattle, and camels supported different dairy economies across irrigated farmland, steppe, and desert margins.
