Falooda today is both a drink and a spoonable dessert. Its familiar South Asian form combines chilled milk, sugar or rose syrup, fine noodles, and soaked basil seeds, whose gelatinous outer layer produces a texture unlike that of an ordinary milkshake. Vendors and households may add kulfi or ice cream, jelly, nuts, fruit, or flavored syrups. No single formula is universal, and the heavily garnished modern glass should not automatically be projected into the early seventeenth century.
The name connects falooda to Persian fālūdeh, a much older family of cold sweets made with slender starch noodles and syrup, often perfumed with rosewater. Persian fālūdeh is not identical to modern milk-based falooda. The latter is generally understood as a South Asian adaptation shaped by Persianate culinary influence, including that of the Mughal world, but the exact place, date, and individual responsible for the transformation are not securely documented. Assigning the completed modern drink to precisely 1600 is therefore a reasonable period marker at best, not a demonstrated invention date.
Preparation depends on managing each component separately. Sweet basil seeds, commonly called sabja or tukmaria, are soaked until they develop translucent coatings. Wheat-, corn-starch-, or other starch-based vermicelli is cooked until tender and cooled. These are layered with sweetened milk and rose syrup shortly before service so that the noodles remain distinct. Historically, cooling was itself consequential: ice and intensive chilling could be expensive or seasonal, especially before mechanical refrigeration. Early versions may therefore have differed greatly in temperature and presentation according to climate, household resources, and access to ice.
Milk gave the South Asian preparation greater richness than its Persian namesake, while basil seeds supplied body and a cooling sensory association. Rose fragrance situated it among a broader range of Persianate and South Asian sherbets, confections, and perfumed dairy foods. In elite settings, costly sugar, aromatics, careful layering, and chilling could signal refinement. Urban sweet shops and street vendors later made the combination available to a much broader public.
Mechanical ice production, refrigeration, bottled syrups, commercial noodles, and mass-produced ice cream transformed falooda during the nineteenth and twentieth centuries. It spread and diversified across India, Pakistan, Bangladesh, Sri Lanka, Myanmar, and migrant communities. Contemporary versions range from relatively simple rose milk with seeds and noodles to towering sundaes. Their shared name preserves a defensible connection to Persian fālūdeh, but their ingredients also document centuries of localization rather than one unchanged courtly recipe.

Historical context
The Mughal Empire under Akbar and, after 1605, Jahangir governed much of northern India and supported Persian as a language of administration and high culture. Persianate tastes circulated through courts, military networks, merchants, and mobile cooks, while Indian Ocean trade connected South Asia with the Persian Gulf, Arabia, Southeast Asia, and European ports. Sugar production was long established in South Asia, but refined sugar, aromatic rose products, and chilled service varied sharply in cost and availability. In Sri Lanka, Portuguese power was concentrated around parts of the coast, including Colombo, while the Kandyan kingdom remained independent inland. None of this establishes that modern falooda existed in Colombo or elsewhere in exactly 1600.
