Jogurt is the western Balkan form of a broad family of fermented milks: tart, usually unsweetened, and often fluid enough to drink. In Bosnia and Herzegovina and neighboring countries, it is especially familiar as the cooling partner to burek and other hot savory pastries. It also accompanies grilled meat, bread, or a quick breakfast. Unlike ayran and related diluted beverages, jogurt is normally cultured milk itself rather than yogurt mixed with water and salt. Its consistency varies from readily pourable to spoonable, so “drinking yogurt” describes an important regional style rather than a rigid recipe.

Cultured milk long predates industrial dairying in southeastern Europe. Before refrigeration, acidification offered a practical way to extend milk’s useful life, although fermentation did not make it indefinitely safe. Households and pastoral communities could retain a portion of an earlier batch to inoculate fresh milk, while fermentation might also begin through an established microbial community in vessels and working environments. The exact organisms and results varied. Modern yogurt production instead relies principally on controlled cultures of Streptococcus thermophilus and Lactobacillus delbrueckii subsp. bulgaricus, whose joint activity acidifies milk and creates its characteristic aroma and texture.

Preparation is simple in outline but sensitive in practice. Milk is heated, both to reduce unwanted microbes and, under modern methods, to alter proteins so that the final product develops a stable body. It is cooled to a culture-friendly temperature, inoculated, and held warm until bacterial fermentation converts some lactose into lactic acid. The falling pH causes milk proteins to form a gel. For fluid jogurt, that gel is stirred or gently broken before chilling. Fat level, milk solids, incubation time, homogenization, and mechanical treatment all affect thickness and sharpness.

The emergence of jogurt as a standardized urban commodity belongs mainly to the twentieth century, not to a single invention in 1900. Advances in bacteriology helped producers understand and select cultures, while pasteurization, mechanical refrigeration, hygienic filling, and organized milk collection allowed dairies to deliver a more uniform product. Glass bottles were followed by cartons, cups, and plastic bottles. These systems reduced seasonal and household variability, widened distribution, and made chilled cultured milk convenient for city consumers, although they also displaced some locally maintained cultures and flavors.

Modern Balkan jogurt remains closely associated with bakery culture and savory eating rather than dessert. Commercial examples may be whole-milk, reduced-fat, fortified with extra milk solids, or formulated for a particularly smooth pour. The defensible continuity is the practice of souring milk and consuming it plainly; today’s standardized cultures, controlled processing, cold chain, and packaging are industrial changes. Jogurt therefore joins an old preservation technique to a distinctly modern system of urban dairy production and everyday refrigerated distribution.

Historical context

Southeastern Europe was still predominantly rural, but cities such as Sarajevo, Belgrade, Zagreb, and Sofia were growing and acquiring modern municipal services. Railways moved milk and other perishables toward urban markets, while pasteurization, bacteriology, and mechanical refrigeration were beginning to reshape dairying. Scientific identification of the characteristic Bulgarian yogurt bacterium followed in the first decade of the twentieth century. Household and pastoral fermentation nevertheless remained more widespread than factory bottling, which expanded substantially later as electrification, cold storage, and organized dairy collection developed.
