Alouda is a chilled Mauritian milk drink in which texture matters as much as flavor. Sweetened milk carries soaked basil seeds—often called tukmaria or sabja—and pieces or strands of agar jelly. Preparation is straightforward but staged. Basil seeds are soaked separately until fully expanded. Agar—derived from red algae and traded commercially in dried form—is boiled in water so that it dissolves, then cooled into a gel and cut or grated. Milk is sweetened and flavored before the seeds and jelly are stirred in. Chilling is essential to the drink’s identity. Its growth as a popular refreshment therefore also belongs to an industrializing food environment in which manufactured ice, refrigeration, bottled essences, refined sugar, and urban retail made cold sweet drinks increasingly practical.
Mauritian alouda is generally less elaborate than many contemporary faloodas. It commonly omits the starch noodles that characterize numerous South Asian versions, while emphasizing agar jelly and basil seeds suspended directly in flavored milk. Yet there is no single canonical formula. Household recipes, market stalls, snack shops, fairs, and religious or family gatherings support different proportions and flavorings. Rose is recognizable, but vanilla and almond preparations are also widespread enough that defining alouda only as rose milk is too narrow.
