Suusac

Suusac is a fermented milk associated particularly with Somali-speaking pastoral communities in Somalia and Kenya. Fresh camel milk is its most distinctive base, although cow milk is also reported. Fermentation turns the normally sweet, fluid milk sour, aromatic, and lightly thickened. The finished drink is consumed without the straining that produces concentrated yogurt or cheese, so it retains much of the milk’s water, protein, fat, lactose, and minerals.

No secure evidence establishes that suusac originated in 1800, or in any single settlement. Its emergence is better understood as part of a much older pastoral solution to a practical problem: milk is abundant only at certain moments, spoils rapidly in warm conditions, and must often be handled far from permanent buildings. Modern ethnographic and food-science descriptions document suusac, but they do not provide a precise invention date. The name, household practice, and importance of camel milk connect it to Somali food culture extending across present-day political borders.

Traditionally, fresh milk may be placed in a cleaned gourd or comparable vessel and allowed to ferment at ambient temperature. Some vessels are smoked, a practice that can influence flavor, inhibit certain unwanted organisms, and help shape the vessel’s microbial environment. Residues from an earlier batch may accelerate fermentation, although spontaneous fermentation without a deliberately maintained starter is also described. Lactic-acid bacteria consume part of the lactose and produce acid; yeasts and other organisms may also participate. Temperature, milk source, vessel history, and fermentation time therefore produce substantial variation. After one or more days, the sour milk is stirred or shaken and served as a drink or food.

Suusac’s significance lies in its fit with mobile livestock keeping. Camels can provide milk under arid and semi-arid conditions in which crop cultivation and cattle production are difficult. Acidification delays some forms of spoilage and changes flavor, but it is not sterilization. Traditional raw-milk suusac can carry pathogens if the milk, animal, vessel, or water is contaminated. That risk matters especially for children, pregnant people, older adults, and anyone with reduced immunity.

Contemporary suusac ranges from household batches to experimental or small-scale commercial products. Refrigeration, pasteurization, hygienic containers, and selected starter cultures can make fermentation more predictable and safer, though they may alter flavors produced by household vessels and mixed microbial communities. Suusac remains a defensible modern connection to pastoral food knowledge: not an unchanged survival from a dated moment, but a living method through which perishable herd milk becomes a culturally recognizable sour drink.

Historical context

The world’s population was approaching one billion, but the Horn of Africa remained predominantly rural, with extensive arid and semi-arid zones favoring mobile herding over intensive cultivation. Somali-speaking communities moved livestock between seasonal water and pasture, while ports on the Gulf of Aden and Indian Ocean participated in long-distance trade with Arabia, northeastern Africa, and western India. Milk from camels, cattle, sheep, and goats was consumed close to the herd because mechanical refrigeration did not exist. Fermentation, vessel smoking, and rapid distribution were practical ways to manage perishability. Nairobi had not yet been founded as a town—it developed around the railway at the end of the nineteenth century—so its coordinates should not be read as an 1800 production center.
