Ryazhenka is a cultured dairy food made not from fresh milk, but from milk that has first undergone prolonged heating. After bread or other foods had been baked, residual heat could hold a covered or partly covered pot of milk at a gentle temperature for hours. Some water evaporated, concentrating fat, protein, and lactose. Reactions between lactose and milk proteins—principally Maillard browning rather than true caramelization—gradually darkened the milk and generated its characteristic aroma. A surface skin could form and might be stirred back into the milk, although household methods varied. Earthenware vessels were well suited to the slow, even heating.
The baked milk was then cooled until warm enough for fermentation without killing the starter organisms. Sour cream, cultured cream, or a portion of a previous batch could supply lactic-acid bacteria. During incubation, these organisms converted some lactose into lactic acid, thickening the milk as its proteins coagulated. The finished product could be spoonable or pourable depending on milk concentration, fat content, culture, and fermentation time. It was eaten or drunk plain, sometimes alongside bread or other everyday foods. Heating reduced many competing microorganisms, while fermentation and acidity delayed spoilage, but traditional ryazhenka still remained perishable.
