Azorean tea is an infusion made from leaves of Camellia sinensis grown and processed on São Miguel. Its importance lies less in a unique brewing formula than in the survival of commercial tea cultivation on a European island. Tea plants were reportedly present in the Azores before a viable industry emerged, but 1878 marks a decisive technical intervention rather than an uncontested moment of origin. Agricultural promoters on São Miguel brought Chinese specialists to teach local workers how to cultivate, pluck, roll, oxidize, and dry tea.
The initiative formed part of a search for dependable crops during a difficult agricultural transition. São Miguel had participated in Atlantic commodity markets through products including citrus fruit, but disease, changing trade conditions, and competition exposed the risks of dependence on a narrow export base. Tea suited the island’s mild, humid oceanic climate and acidic volcanic soils. Establishing an industry nevertheless required more than planting shrubs: leaf quality depended on selective plucking, rapid delivery to a factory, careful moisture removal, and control over oxidation and drying.
For black tea, fresh leaves are withered, rolled or mechanically broken to damage their cells, allowed to oxidize, and then heated and dried. Green tea is heated earlier to limit oxidation before rolling and drying. These are broad process descriptions; machinery and factory practice changed over time, and the modern steeping instructions on the card should not be treated as a documented nineteenth-century household recipe. The resulting dry leaves are infused in hot water and may be drunk plain or with additions such as sugar or milk according to preference.
Tea production expanded on São Miguel in the late nineteenth and early twentieth centuries, with factories turning a perishable leaf into a stable, transportable commodity. It later declined under pressure from lower-cost production in much larger tea-growing regions. Surviving estates, especially Gorreana and Porto Formoso, maintain working fields and manufacturing traditions, although their present equipment, product range, tourism role, and quality controls are not unchanged remnants of 1878.
Azorean tea therefore connects everyday drinking with a specific history of technical transfer. Chinese expertise was adapted to an Atlantic island economy already tied to long-distance commerce. Today’s black and green teas preserve that agricultural experiment, while also showing how local identity can develop from a globally mobile plant and imported processing knowledge. The tradition is unusual in Europe, but it belongs to the wider, often colonial history through which tea plants, machinery, labor systems, and consumer habits moved far beyond East Asia.

Historical context
Steamships and expanding railway networks were accelerating the nineteenth-century trade in tea, while British-controlled production in India and Ceylon was challenging China’s long dominance of overseas supply. The Azores occupied a strategic mid-Atlantic position but had a small island economy vulnerable to crop disease and shifting export markets. São Miguel’s humid maritime climate, year-round rainfall, and volcanic terrain made it a plausible experimental home for a perennial Asian crop, although its scale could never match the vast plantation districts of South Asia.
