Sorting produced commercial grades rather than fundamentally different plants. Early work depended heavily on hand labor and relatively simple equipment; specialized rollers, dryers, factories, and power systems later increased scale and consistency. CTC manufacture—crushing, tearing, and curling the leaf—is a twentieth-century development and does not describe Taylor’s founding-era process.
The new industry reshaped both land and society. Estates replaced coffee fields and, in some areas, additional forest or mixed cultivation. Large numbers of Tamil workers migrated from southern India and supplied the demanding labor of clearing, planting, plucking, and factory handling. Their work made Ceylon tea profitable, yet plantation communities endured low wages, poor housing, disease, and restrictive labor arrangements. Tea’s celebrated export history cannot be separated from those unequal colonial conditions.
Brewing practices were never confined to one formula. Export consumers often drank the strong black liquor with milk and sugar, while tea could also be served plain. Today, a practical preparation uses roughly 2–3 grams of leaf per 200 milliliters of near-boiling water for three to five minutes. Modern Kandy teas may be orthodox or, in some production, CTC; they are also blended across estates and seasons. The enduring connection to 1867 is thus not an unchanged recipe but a regional industry, a black-tea manufacturing tradition, and a district name carried into the global market.

Historical context
Ceylon was a British colony whose export economy depended heavily on plantation coffee. The railway between Colombo and Kandy was completed in 1867, greatly improving movement between the central highlands and the principal port. The island’s population was roughly 2.4 million by the 1871 census, and migration from southern India was supplying labor to expanding estates. Steamships and imperial commercial networks connected Ceylon with Britain, India, China, and other tea markets.
