Axone, also widely spelled akhuni, is a fermented soybean food central to several Naga cuisines and particularly associated with Sumi Naga foodways. It is not a single standardized condiment. Depending on household and community practice, it may appear as moist fermented beans, a mashed paste, or cakes that have been dried or smoked. Its powerful aroma and deep savory flavor allow a relatively small amount to season an entire pot.

Traditional preparation begins by boiling mature soybeans until soft. The drained beans are placed in a basket or another container, often with leaves, and kept in a warm location, historically near the household hearth. Over several days, naturally present microorganisms multiply. Axone belongs broadly to the family of alkaline soybean fermentations commonly dominated by Bacillus bacteria, although the microbial community varies with beans, vessels, leaves, temperature, and household environment. The beans soften further and develop a sticky texture, pronounced odor, and abundant savory compounds. Fermented beans may then be pounded, shaped, dried, or smoked, extending storage and producing distinct flavors.

Cooks use axone less as a self-contained dish than as a foundational seasoning and protein-rich ingredient. It is simmered with pork and rendered fat, but it can also flavor preparations containing vegetables, freshwater fish, snails, or other locally available foods. Chilies, ginger, garlic, and indigenous aromatic herbs may accompany it, but recipes differ substantially. Claims for one definitive ingredient list or preparation therefore flatten a diverse living tradition.

Historical context

The Naga Hills consisted largely of politically autonomous, agriculture-based village communities connected by local exchange rather than a unified state. The Ahom kingdom remained a major power in the neighboring Brahmaputra Valley, while the East India Company controlled Bengal but had not yet established comprehensive rule in the Naga Hills. Wet-rice cultivation, shifting cultivation, household livestock, forest gathering, smoking, drying, and fermentation supported food security in a mountainous environment where transport was difficult. Most detailed documentation of Naga foods came later, making an exact 1800 date for axone a modern chronological approximation rather than a securely recorded beginning.
