Soy sauce is a salty, aromatic liquid produced by fermenting soybeans, often with roasted wheat or another grain, in association with molds, yeasts, and bacteria. Its recognizable modern form cannot be securely assigned to 100 CE. What early Chinese writings do establish is a much older family of fermented seasonings called jiang: pastes and sauces made from varied raw materials, including meat, fish, grain, and eventually soybeans. Modern jiangyou developed within this larger tradition rather than appearing as a single documented invention.

In Han China, fermented condiments offered concentrated flavor alongside staple grains and vegetables. Salt discouraged many spoilage organisms, while managed fermentation transformed proteins and carbohydrates into strongly savory compounds. Surviving texts indicate that jiang was familiar and socially significant, but their terminology does not always reveal exact ingredients or consistency. A reference to a sauce, paste, or clarified liquid therefore cannot automatically be identified as modern soy sauce. The precise relationship between Han-period jiang and later jiangyou remains a historical reconstruction.

More detailed evidence for soybean-paste manufacture appears in later agricultural literature, notably the sixth-century Qimin Yaoshu. Traditional production involved cooking or steaming beans, cultivating a microbial starter on beans or grain, combining the material with brine, and allowing it to mature. Liquid could be separated from a fermented mash and used as seasoning, while the remaining solids retained culinary value. Later methods increasingly emphasized soybean-and-wheat mixtures, repeated stirring or exposure, pressing, filtration, and sometimes heating to stabilize the finished liquid. Practices varied considerably by region and workshop.

By later imperial times, liquid soy seasonings were clearly established, and related technologies spread and diversified across East Asia. Chinese jiangyou, Japanese shoyu, Korean ganjang, and other sauces share fermentation principles but are not interchangeable products or evidence of one unchanged recipe. Ratios of beans to grain, starter organisms, brine strength, aging time, and extraction methods produced different colors, aromas, and levels of sweetness or salinity. Industrial brewing eventually introduced controlled cultures, enclosed equipment, standardized blending, pasteurization, and faster chemical or enzymatic hydrolysis.

Modern brewed soy sauce is consequently both ancient in ancestry and comparatively recent in standardized form. It seasons rice, noodles, vegetables, fish, meat, marinades, and dipping sauces while supplying substantial sodium in small volumes. Its history illustrates how preservation knowledge, microbial cultivation, grain and soybean agriculture, commerce, and changing tastes converged over many centuries. The defensible connection to 100 CE is the established culture of fermented jiang, not a securely documented bottle of soy sauce identical to that used today.

Historical context

The Eastern Han governed a large agrarian empire whose capital was Luoyang. Millet and wheat dominated much of northern farming, while rice cultivation was increasingly important in the Yangtze basin; soybeans were already a well-established crop. Iron tools, mills, ceramic storage vessels, salt production, and long-distance roads supported food processing and exchange. Silk Road networks linked Han territories indirectly with Central Asia and lands farther west. The coordinates point to the lower Yangtze region near modern Shanghai, but Shanghai did not yet exist as the later metropolis, and no specific local origin for soy sauce is demonstrated there.
