Maize in Ming China

AD 1550

Reconstruction

Maize reached China during the sixteenth century, entering a farming system already organized around rice, wheat, millet, and numerous regional crops. Its American origin is secure, but its precise route into China remains debated. Maritime traffic through Portuguese-linked ports, overland movement through Central or South Asia, and circulation from mainland Southeast Asia into Yunnan are all plausible channels. Local gazetteers record maize in Henan in 1555 and in parts of Yunnan during the 1560s. These notices demonstrate early cultivation, not immediate nationwide abundance.

Li Shizhen’s Bencao gangmu, drafted in 1578 and first printed in the 1590s, called maize yushushu and described it as coming from western regions. Crucially, Li said that it was only sparsely cultivated. This contemporary qualification corrects older claims that maize was already produced across vast areas of late-sixteenth-century China. Other names, including yumai, reflected attempts to classify the unfamiliar grain through comparison with established cereals.

Maize offered farmers an important practical advantage: it could be raised as a rain-fed crop on slopes and uplands where irrigated paddy rice was difficult or impossible. Seed could be selected from harvested ears and planted in cleared plots, gardens, or fields, sometimes alongside legumes and other dryland crops. Direct evidence for particular Ming-era maize recipes in Southwest China is scarce. Boiling or roasting immature ears and drying, pounding, or milling mature kernels into meal are reasonable reconstructions from the crop’s properties and later regional practice, but they should not be treated as observed sixteenth-century customs. Later communities made porridges, steamed breads and cakes, and distilled drinks from maize, while also using it as animal feed.

Between 1550 and 1700, maize remained a crop in diffusion rather than the fully transformative staple it later became. Its large-scale advance into southern and southwestern uplands occurred mainly during the eighteenth and nineteenth centuries, encouraged by population pressure, migration, and demand for cultivable land. Economic research associates that later expansion with substantial population growth but not with comparable gains in real wages or urbanization. Paleoecological evidence from Guangxi likewise places widespread local maize cultivation and accelerated forest clearance after about 1700, rather than firmly within the Ming period.

The enduring significance of the Ming introduction lies in the new agricultural option it created. Maize eventually supported settlement beyond rice-growing valleys, but slope cultivation could also intensify deforestation, erosion, and degradation in fragile karst landscapes. Today maize remains a major Chinese crop used for food, livestock feed, starch, oil, and industry. Modern corn porridges, steamed maize breads, and roasted ears therefore belong to a long history of adaptation, although they cannot be traced to a single documented Ming recipe or introduction route.

Historical context

Late Ming China was tied increasingly to global maritime commerce and expanding silver flows. Portuguese merchants established a permanent base at Macao in 1557, while trans-Pacific shipping connected the Americas and Manila from 1565 onward. The Ming dynasty fell in 1644, followed by decades of warfare and Qing consolidation. Maize entered during this political and commercial transformation, but its broad colonization of Southwest China’s uplands mostly followed in the eighteenth and nineteenth centuries.

Archaeobotanical

ModeratePollen and diagnostic phytolith evidence directly identifies maize in dated sediment sequences from northwestern Guangxi, but its first local appearances are mainly from the eighteenth century and therefore document the later expansion rather than the earliest Ming introduction.

Written sources

StrongSixteenth-century local gazetteers and Li Shizhen’s Bencao gangmu provide direct textual evidence that maize was known and cultivated in China by the mid-to-late 1500s. Li’s statement that it was sparsely grown limits claims about its early scale.

Food identification

StrongDescriptions and illustrations associated with the names yushushu and yumai are sufficiently characteristic for scholars to identify the plant as Zea mays, although some purported earlier references remain disputed.

Dating

ModerateGazetteer dates such as 1555 in Henan and the 1560s in Yunnan support mid-sixteenth-century cultivation. Gazetteers may survive in later editions, however, and a recorded date is not necessarily the date of first introduction.

Preparation method

LimitedSpecific Southwest Chinese maize dishes are poorly documented for 1550–1700. Boiling, roasting, drying, and milling are reasonable reconstructions supported by later practice, not direct observations of early Ming households.

Geographic attribution

ModerateEarly records occur in several separated regions, including Henan and Yunnan, suggesting multiple entry or diffusion pathways. Southwest China was important, but it cannot be established as China’s sole point of introduction.

Historical interpretation

ModerateThe conclusion that maize later facilitated upland settlement is well supported. The scale, timing, demographic effect, and relative importance of maritime and overland transmission routes remain subjects of scholarly interpretation.
