Carne seca is beef preserved by heavy salting and drying, a practical answer to the rapid spoilage of fresh meat in warm climates and to the long distances separating colonial ranches from consumers. Brazilian terminology is not perfectly uniform: carne seca, charque and jabá may overlap in ordinary speech, while regulated or regional usage can distinguish them. Carne de sol is generally less heavily salted, dried for a shorter time and sold with more moisture, so it should not automatically be treated as the same product.

Colonial cattle raising expanded through Brazil’s interior as herds supplied draft power, hides, tallow and meat. In the dry northeast, relatively low humidity and seasonal winds favored open-air curing. Cattle were slaughtered, the flesh cut into broad, comparatively thin pieces, and salt worked over the exposed surfaces. The pieces were then drained and dried, historically on racks or lines, with turning and further salting as conditions required. This reduced available moisture while salt inhibited many spoilage organisms. The result remained vulnerable to contamination, insects and damp weather, but it traveled and stored far better than fresh beef.

Preserved meat could therefore move from pastoral districts to plantations, mining settlements, ports and growing towns. It was commonly cooked only after soaking or repeated washing to remove excess salt. Boiling and shredding made the dense fibers easier to incorporate into beans, stews, cassava flour mixtures and later dishes such as feijoada. These combinations were nutritionally consequential: beef supplied concentrated protein, iron and vitamin B12, while beans and cassava extended an expensive animal food across more servings. Sodium intake, however, could be very high, especially when desalting was incomplete.

The trade was inseparable from colonial inequality. Ranch work, slaughtering, transport and domestic cookery involved free, coerced and enslaved labor, while preserved beef of differing quality was distributed through a strongly hierarchical food system. Drought could kill herds, disrupt curing and intensify hunger among people already living with insecure access to land and food.

An exact origin in northeastern Brazil around 1700 cannot be demonstrated from the date alone. Commercial dried-beef production became especially visible later in the eighteenth century. Severe northeastern droughts helped redirect part of the industry toward the far south, where the charqueadas around Pelotas became major suppliers in the nineteenth century. Modern carne seca is commonly produced under controlled commercial conditions, but its culinary logic remains recognizable: salt and dehydration create a durable ingredient that is soaked, cooked and combined with staples rather than eaten like fresh steak.

Historical context

Portuguese America was expanding beyond its coastal sugar districts into cattle-raising interiors and gold-mining regions. Pack animals and overland routes tied ranches to settlements hundreds of kilometers away, while Atlantic commerce supplied salt and carried colonial commodities. Refrigeration did not exist, roads were difficult, and tropical heat made fresh meat highly perishable. Preservation by salting and drying was therefore essential infrastructure rather than merely a culinary preference. Brazil’s population was growing rapidly through migration and the forced transport of enslaved Africans, although reliable totals for the opening of the eighteenth century remain approximate.
