Sugar Barbados

Reconstruction

Between the early 1640s and 1700, Barbados was remade from a colony of small mixed farms into the most intensive sugar-producing landscape in the early English Caribbean. Tobacco and cotton had preceded sugar, but high prices, merchant credit, expanding Atlantic markets, and improved milling and boiling equipment made cane extraordinarily attractive to planters. Archaeology at Trents Plantation captures this transition: a 1646 map and excavated deposits show an earlier farm overlaid by a reorganized estate with industrial works and a separate settlement for enslaved laborers.

Sugar production demanded coordinated work and substantial capital. Enslaved Africans and, especially during the transition, European indentured servants cleared and planted fields, weeded and cut cane, carried it quickly to mills, tended livestock, repaired equipment, and worked amid intense heat in boiling houses. Rollers crushed the harvested cane, after which workers clarified and repeatedly boiled the juice in a sequence of heated copper vessels. The concentrated syrup was transferred to containers to crystallize and drain. The principal export was brown muscovado sugar; molasses remained as a by-product, while fermented cane products and molasses could be distilled into the early spirit called rumbullion or kill-devil, now recognized as rum.

Spot something wrong in this reconstruction?

Sugar was chiefly an export rather than the staple food of the people forced to produce it. Richard Ligon’s account of Barbados in the late 1640s describes cassava bread and maize as common colonial staples. He reported plantains and small weekly allocations of imported salted fish for enslaved people, although his observations are selective and cannot represent every estate or household. Later archaeological and documentary evidence shows that provisioning varied and included ground provisions, imported foods, domestic animals, and locally caught marine resources. Diet differed sharply by status, access, estate policy, and opportunity to cultivate or trade food.

The transformation was demographic as well as agricultural. Profits enabled land consolidation, construction of windmills and boiling houses, and the purchase and forced transportation of increasing numbers of Africans. By 1680, records indicate more than 46,000 enslaved people on the island and fewer than 2,400 indentured servants. Barbados also enacted a slave code in 1661, helping formalize a racialized system of hereditary bondage. Elements of its plantation organization and law were subsequently carried into Jamaica, the Leeward and Windward Islands, Suriname, and English settlements in Carolina.

Barbados therefore helped make sugar an increasingly accessible Atlantic commodity while concentrating its human costs at the place of production. Modern muscovado, molasses, and Barbadian rum retain direct technological connections to seventeenth-century cane processing. More broadly, today’s inexpensive and ubiquitous sugar emerged from a system in which industrial coordination, global trade, coerced migration, and racial slavery were inseparable.

Historical context

Barbados was a small island of about 430 square kilometers occupying a strategic position between Atlantic shipping routes and the eastern Caribbean. English settlement had begun in 1627, while the English Civil Wars unfolded from 1642 to 1651 and Dutch-controlled northeastern Brazil remained a major center of sugar expertise until 1654. By 1680, Barbados held more than 46,000 enslaved people, alongside roughly 21,000 white inhabitants, including fewer than 2,400 indentured servants. Cane fields, roads, ports, windmills, boiling houses, and settlements were rapidly replacing the island’s earlier mixed farms and much of its remaining woodland.
