In 1867, the German-born entrepreneur Henri Nestlé began selling Farine Lactée Henri Nestlé in Vevey, Switzerland. The product belonged to a new class of proprietary infant foods intended for babies who could not be breastfed. It was important, but it was not the first commercial “formula”: chemist Justus von Liebig had published and marketed his soup for infants in 1865. Nestlé’s achievement was to turn related nutritional ideas into a convenient, branded, exportable food.
Nestlé described the chief ingredients as good cow’s milk, bread or wheat flour, and sugar. In production, milk and sugar were concentrated to a paste; prepared cereal material was incorporated, and the mixture was dried and milled into a powder. Processing the cereal was meant to convert much of its starch into more soluble carbohydrates, reflecting contemporary concerns about infant digestion. Caregivers reconstituted the powder with water, reducing household preparation compared with Liebig’s multi-step recipe.
The market was shaped by grim realities. Across much of nineteenth-century Europe, roughly 15 to 25 percent of infants died before age one, with rates varying by country and community. When a mother could not nurse, families relied on wet nurses, animal milk, or cereal-and-milk paps. Urban milk could be adulterated or contaminated, while unrefrigerated mixtures and hard-to-clean bottles created severe infection risks. A shelf-stable, measured powder therefore promised consistency and portability, although it could not make unsafe water, dirty utensils, or incorrect dilution safe.
Commercial growth depended as much on distribution and authority as on recipe. Nestlé used tins, a distinctive nest trademark, printed instructions, testimonials, and direct cultivation of doctors and pharmacists. After he sold the Vevey business in 1875, its new owners employed chemists and expanded production and sales. By the late nineteenth century, Nestlé competed with condensed-milk firms and numerous proprietary infant foods across international markets. Medical opinion was never unanimous: some physicians praised the convenience, while others criticized secret or cereal-heavy compositions and preferred individualized mixtures of cow’s milk, cream, sugar, and water.
These products changed infant feeding by moving part of an intimate household and caregiving practice into factories, laboratories, pharmacies, advertising, and global trade. They could be valuable when human milk was unavailable, yet their expansion also exposed inequalities: safe preparation required money, clean water, fuel, hygienic vessels, and reliable instructions. Historical claims that a single product “solved” infant mortality are therefore promotional rather than demonstrated.
Modern infant formula descends from this industrial transformation, but not unchanged. Twentieth-century nutrition science added defined protein, fat, carbohydrate, vitamin, and mineral requirements; dairy hygiene, sterilization, packaging, and regulation improved safety. The older marketing alliance between manufacturers and medicine also generated lasting controversy, eventually contributing to the World Health Organization’s 1981 International Code of Marketing of Breast-milk Substitutes. The Vevey launch matters less as a solitary invention than as a turning point in the commercialization, standardization, and worldwide branding of infant nutrition.
