Niagara Icewine is a sweet wine made from grapes that freeze naturally while still attached to the vine. Freezing removes no sugar or acid; instead, the press retains much of the fruit’s water as ice and releases a small quantity of concentrated must. The finished wine commonly combines pronounced sweetness with enough acidity to remain vivid rather than merely syrupy.
Ice wine was not invented in Canada. Documented European precedents, especially in German-speaking wine regions, long predate Niagara production. Ontario’s contribution was to adapt this demanding method to a cold-climate commercial industry. Several Canadian growers experimented with naturally frozen grapes during the late twentieth century. At Inniskillin in Niagara, a 1983 attempt was reportedly lost largely to birds, while the 1984 Vidal harvest produced a successful wine. That vintage is therefore an important milestone, not an uncontested single moment of Canadian invention. Wider international recognition followed later, particularly as Niagara producers won awards and developed export markets.
Vidal, a cold-hardy French hybrid, became especially important because it can retain thick-skinned fruit into winter. Riesling, a European wine grape with high natural acidity, is another established choice. Growers must preserve sound clusters for weeks or months beyond the ordinary harvest while facing birds, deer, wind, rot, dehydration and fruit dropping. Nets may protect the crop, but losses and low juice yields remain central to the wine’s cost.
Under Ontario quality rules, qualifying grapes must freeze naturally on the vine and are harvested and pressed at temperatures at or below roughly −8°C. Picking often occurs at night or before dawn when a dependable freeze arrives. The hard grapes enter the press immediately. Ice crystals remain with the pressed solids while a dense, sugar-rich juice emerges. Yeast ferments this must slowly and may stop before consuming all its sugar because high sugar and rising alcohol create a difficult environment. Producers then clarify, stabilize and bottle the wine, often in slender 200- or 375-millilitre bottles.
Icewine is usually poured in small servings and consumed as a dessert wine, either alone or with foods such as fruit, cheese or pâté. Styles differ by grape, vintage and winemaking, but peach, apricot, citrus, tropical-fruit and honey-like impressions are common descriptions rather than added ingredients. Niagara’s success helped make naturally frozen wine a recognizable Canadian product and encouraged formal production standards. Climate change now complicates its future: warmer, less predictable winters can delay or prevent suitable freezes, while sudden thaws and extreme cold can both damage the crop.

Historical context
Ontario’s modern wine industry was still comparatively young and relied heavily on winter-hardy hybrid grapes alongside expanding plantings of European Vitis vinifera. Niagara’s vineyards benefited from the moderating influence of Lakes Ontario and Erie, yet severe winter freezes remained normal. International consumers were also becoming more familiar with wines from producers outside Europe. Ontario’s Vintners Quality Alliance system emerged later in the decade, giving wines such as Icewine enforceable geographic and production standards.
