Frijoles de la olla—literally “beans from the pot”—are whole beans served in some of the liquid in which they were cooked. Historical context
Central Mexico contained large, intensively cultivated communities linked by tribute and market exchange. Tenochtitlan, with a population commonly estimated in the low hundreds of thousands, was one of the world’s largest cities. Maize, beans, squash, chiles, and amaranth supported dense settlement, while chinampa agriculture produced crops near the lakeshore.
