East African chapati is an unleavened wheat flatbread cooked on a griddle, usually with enough oil to produce a tender surface and distinct internal layers. Unlike the relatively lean, everyday roti common in many South Asian households, a widely recognized East African form is laminated: the cook oils a rolled sheet of dough, folds or coils it, rests it, then rolls it again. The resulting round browns in spots while thin strata separate inside. Recipes vary, however, and not every chapati made in the region is strongly layered or rich in fat.

The bread belongs to the history of movement across the Indian Ocean. South Asian merchants had long traded with East African ports, while much larger communities arrived under European colonial rule, including laborers recruited to build the Uganda Railway from the 1890s. Traders, railway workers, artisans and their families carried established flatbread practices into towns and settlements. This makes South Asian transmission highly probable, but the dish cannot be assigned securely to Nairobi, to the year 1900, or to a single inventor. Its regional form emerged gradually through cooking in homes, workplaces, food stalls and restaurants.

A basic dough combines wheat flour, water and salt; oil, vegetable shortening or ghee may be incorporated or applied during shaping and cooking. After kneading and resting, portions are rolled out. For a layered version, each piece is brushed with fat, folded into a strip or rolled into a rope, coiled, rested and flattened once more. It is then cooked on a flat pan, turned repeatedly and brushed with additional fat until flexible, blistered and mottled brown. Some cooks clap or compress the cooked bread to loosen the layers.

Chapati is eaten by tearing off pieces and using them to gather beans, lentils, leafy vegetables or meat stews. It may accompany spiced rice dishes at celebrations and is also sold as an everyday street or restaurant food. In Uganda, the flatbread became the wrapper for rolex, a later street dish combining chapati with a rolled vegetable omelette. Across Kenya, Uganda, Tanzania and neighboring areas, recipes differ in thickness, flour choice, sweetness and amount of oil. Refined flour and cooking fat historically made the bread more expensive than many locally grown cereal staples, reinforcing its place in hospitality and festive meals, although availability and status varied by household.

Modern packaged flour, commercially refined vegetable oil and urban griddle cooking have made chapati easier to produce at scale. The bread is now thoroughly embedded in East African food culture rather than simply a transplanted South Asian item. Its history demonstrates how migration and colonial transport systems could introduce a technique, while local cooks transformed its texture, accompaniments and social role.

Historical context

British colonial rule was reshaping transport and labor in East Africa. Construction of the Uganda Railway began at Mombasa in 1896 and reached the Lake Victoria region around the turn of the century, employing tens of thousands of workers recruited from British India. Indian Ocean commerce already linked East African ports with Arabia and South Asia, but railways accelerated inland movement of people and imported goods. Millet, sorghum, bananas and increasingly maize remained more important staples than wheat for much of the population; refined wheat flour was particularly associated with commerce, towns and households able to purchase it.
