Fröccs is the Hungarian form of a wine spritzer: still wine diluted with carbonated water immediately before drinking. Its character depends less on a fixed recipe than on proportion. A nagyfröccs, for example, conventionally contains two measures of wine and one of soda, while other named forms reverse the balance, reduce the serving, or produce a much longer drink. This codified vocabulary distinguishes fröccs from an unspecified glass of watered wine.
Its emergence belongs to the nineteenth-century spread of manufactured soda water. Carbonated mineral waters were already known in Europe, and artificial carbonation predated the Hungarian drink. The Benedictine priest, physicist, and inventor Ányos Jedlik nevertheless played an important Hungarian role by designing carbonation apparatus and establishing soda-water production in Pest around the early 1840s. Reliable machinery made effervescent water available away from natural springs and allowed taverns and households to combine it with local wine.
A celebrated account dates the drink’s naming to an 1842 gathering at András Fáy’s property in Fót. In the story, Jedlik presented soda water mixed with wine and called it by the German-derived word spriccer; poet Mihály Vörösmarty proposed the Hungarian fröccs, suggesting a splash or spurt. The tale is culturally important but should not be treated as a securely documented moment of invention. Wine had long been diluted, and wine mixed with sparkling or carbonated water was not unique to Hungary. The exact dialogue and priority rest largely on later tradition.
Preparation remains deliberately simple. Usually a dry white or rosé wine is poured into a glass and topped with cold, strongly carbonated soda water, although red wine is also used. Traditional soda from a siphon gives a forceful jet and lively effervescence. Ice, fruit, syrups, and spirits are not necessary; the point is to preserve the taste of wine while lowering its alcoholic strength and making it more refreshing. Wine quality, temperature, carbonation, and ratio therefore matter more than elaborate bartending.
Fröccs became embedded in Hungarian tavern, café, garden, and holiday culture. Its many humorous names turned ordering into a shared social code, while dilution made a measure of wine last longer and reduced the alcohol concentration of each glass. Industrial bottling later made commercial sparkling water convenient, but reusable siphons retained symbolic and practical importance. Today fröccs appears at wine bars, festivals, domestic tables, and lakeside terraces. Its modern identity joins an old practice—diluting wine—to an industrial-era technology: dependable artificial carbonation. The drink’s importance lies not in a proven single invention in 1842, but in the particularly Hungarian system of names, ratios, equipment, and sociability that developed around it.

Buda and Pest were still separate cities within the Habsburg Monarchy, together holding roughly 100,000 inhabitants; they would not unite with Óbuda as Budapest until 1873.
