The Pisco Sour is a shaken cocktail built from pisco, fresh citrus juice, sugar syrup, egg white and aromatic bitters. Its structure belongs to the international sour family: a distilled spirit balanced by acid and sweetness. What made the Lima drink distinctive was its use of Peruvian grape brandy and, in its developed form, a white foam marked with drops of bitters.
Victor Vaughen Morris, an American-born bartender who operated Morris’ Bar in Lima, is closely associated with the drink’s emergence during the early 1920s. The bar catered to an international clientele in a capital increasingly connected to global hotel and cocktail culture. Morris may have adapted the whiskey sour formula to pisco, but the precise act of invention is not securely documented. The familiar combination containing egg white and bitters appears to have taken shape through subsequent refinement by bartenders at Morris’ Bar, with Mario Bruiget frequently associated in later accounts with that development. Treating either man’s role as conclusively established would go beyond the surviving evidence.
Preparation depends on vigorous shaking. Pisco, citrus and syrup are combined with egg white, commonly shaken to create an emulsion and then chilled and diluted with ice. Straining produces a smooth drink capped by stable foam; bitters supply aroma as well as a contrasting pattern on the surface. Peruvian recipes commonly call for limón, a small, acidic green citrus that English-language recipes variously translate as lime or lemon. Different pisco styles, citrus varieties, sugar ratios and dilution levels can substantially change the result.
The drink spread from specialist bars into Lima hotels, restaurants and domestic celebrations. During the twentieth century it became an emblem of Peruvian hospitality and eventually a tool of culinary tourism and national promotion. Its fame also intersects with the continuing disagreement between Peru and Chile over the geographical and cultural ownership of pisco, although the cocktail’s early documentary association is specifically with Lima.
Modern versions range from carefully measured bar recipes to bottled mixes and flavored variants made with fruits or herbs. Pasteurized egg white or foaming substitutes are sometimes used to reduce the food-safety concerns associated with raw egg. Cocktail competitions and standardized international recipes have made one formula highly visible, but no single ratio represents every Peruvian practice. The Pisco Sour’s lasting importance lies less in a solitary invention story than in the meeting of an established regional spirit, imported cocktail technique and the skill of Lima’s bartenders.

Estimates assume approximately 60 ml of 40% ABV pisco, 30 ml citrus juice, 20 ml simple syrup, about 25–30 g egg white, bitters and modest ice dilution. Recipes, spirit strength, syrup concentration and final dilution vary greatly. Alcohol supplies most of the energy and makes conventional GI interpretation less useful.
Historical context
Lima was a growing capital of roughly 200,000–250,000 people, drawing migrants, merchants and foreign professionals into new hotels, clubs and bars. Peru was under Augusto B. Leguía’s long presidency, a period marked by modernization projects, foreign investment and sharp social inequality. International cocktail culture circulated through steamship routes, expatriate communities and printed bar manuals. In the United States, national Prohibition began in 1920, helping redirect some bartenders and affluent travelers toward drinking cultures elsewhere in the Americas.
