Culinary argan oil is the edible oil of Argania spinosa, a drought-tolerant tree concentrated in southwestern Morocco. The roasted kernels are ground into a paste and kneaded with small quantities of warm water until the oil separates. It can then be decanted and filtered. This water-assisted household method is laborious and may leave more moisture or sediment than modern mechanical pressing, so careful storage remains important.
The oil is eaten as a condiment and cooking ingredient rather than as a substantial food by weight. It may be served with bread, added to couscous and tagines, or combined with ground almonds and honey in amlou. Particular uses vary by locality and household. Because argan trees grow in a restricted ecological zone, the oil became closely tied to regional identity and to the livelihoods and knowledge of rural Amazigh communities, especially women who traditionally performed much of the processing.
Medieval Arabic botanical and pharmacological literature provides an important textual setting for argan. Ibn al-Baytar, a thirteenth-century botanist and pharmacologist who traveled in North Africa, is frequently associated with an early description. However, assigning that description specifically to 1219 is not securely established without verification of the manuscript passage and its dating. The year should therefore be treated as a proposed textual milestone, not the origin date of the oil.
During the modern commercial expansion of argan oil, mechanical presses, quality controls, cooperatives, export markets, and cosmetic demand changed production. Pressing can reduce the need for water and improve consistency, while roasting still marks oil intended for culinary flavor. Cooperative production has sometimes increased women’s cash income, although benefits and labor conditions vary. Argan knowledge and practices now receive international heritage recognition, and argan agroforestry is valued for supporting food production in a dry environment. Today’s bottled oil thus connects to older regional practice, but it also belongs to a transformed global market whose products and labor arrangements are not identical to medieval household production.
