Rapeseed oil is not one unchanging product with a single, securely documented birthplace. The name covers oils made from several closely related Brassica crops, particularly forms of B. rapa, B. juncea, and B. napus. Their seeds and oils can differ substantially, while archaeological Brassica seeds are often difficult to identify to species. Finds dating to the Bronze Age demonstrate the presence or use of Brassica plants in parts of Eurasia, but seeds alone do not prove that people pressed them for culinary oil. Assigning rapeseed oil specifically to Beijing in 2000 BCE therefore goes beyond the direct evidence.

Where oil was extracted, the basic task was to rupture the seed and separate liquid fat from solid meal. Early processing could have involved pounding, grinding, warming, and pressing with comparatively simple equipment, although a specific Bronze Age rapeseed-oil procedure has not been securely reconstructed. Later workshops used wedges, beams, screws, or mechanical expellers. Heating increased yield, while roasting created a darker oil with pronounced toasted and mustard-family aromas. After pressing, suspended particles could be removed by settling and filtration. The remaining oilcake was valuable as fuel, fertilizer, or animal feed, although its suitability depended on its chemical composition.

In China, rapeseed eventually became an important oil crop, and aromatic càizǐyóu developed a particularly strong culinary identity in Sichuan, Chongqing, Hunan, and neighboring regions. Traditional-style oil is commonly made from heated or roasted seed and retains color and flavor. It can contribute both cooking fat and seasoning: cooks use it to fry ingredients, bloom spices, and build the aromatic base of chile-rich dishes. Precisely when this recognizable regional product emerged is not established by the Bronze Age date attached to the card; the modern name and preparation should not be projected unchanged into prehistory.

European rapeseed acquired a different history. Its oil was useful for lighting and lubrication as well as food, and industrial processing greatly expanded production. Traditional rapeseed varieties could contain high proportions of erucic acid and glucosinolate-rich meal. During the twentieth century, plant breeders selected low-erucic, low-glucosinolate cultivars. Canadian-bred canola became the best-known commercial result, while regulations and market terminology increasingly separated edible low-erucic oil from older rapeseed types.

Modern products consequently range from fragrant, minimally refined roasted oils to pale, deodorized oils with neutral flavor. Refining improves consistency and removes many odor and flavor compounds; it also reduces the sensory character prized in traditional càizǐyóu. Rapeseed oil’s defensible long-term significance lies not in a single uninterrupted recipe, but in repeated adaptation of Brassica oilseeds to local cuisines, pressing technologies, industrial uses, breeding goals, and changing food-safety expectations.

Historical context

Northern China depended heavily on millet agriculture, while rice cultivation was established farther south; the Erlitou cultural horizon was developing around the Yellow River. The mature Shang state and China’s earliest securely attested corpus of writing lay several centuries ahead. Across Eurasia, Bronze Age communities exchanged metals, livestock, crops, and craft knowledge over long distances, while the cities of the Indus tradition were undergoing major reorganization. Archaeological Brassica seeds fit this broad world of mobile crops, but they do not by themselves identify a particular oil, pressing method, or culinary tradition.
