Rookvlees—literally “smoke meat”—is a Dutch cold cut made from a lean, intact muscle rather than chopped or emulsified meat. The finished joint is firm and deep red, with smoke concentrated around its exterior, and is normally shaved into very thin slices. Beef is the form most widely recognized today, although Dutch shops have also sold paardenrookvlees made from horse meat. Modern rookvlees therefore preserves an older combination of whole-muscle curing, drying and smoking while embodying newer food-safety controls and retail technology. It remains distinct from fermented sausage because the muscle structure stays intact. Its history also illustrates a broader shift: techniques once essential for extending the life of meat survived refrigeration by becoming valued flavors and convenient forms of service.

Historical context

The Netherlands formed the Batavian Republic, a politically turbulent successor to the Dutch Republic shaped by Revolutionary France. Roughly two million people lived in the country, and Amsterdam remained a major city of around 200,000 inhabitants despite economic decline from its seventeenth-century peak. Dense towns, canals and coastal shipping connected livestock districts, markets and urban consumers.
