Peameal bacon is a Canadian cured-meat preparation made from boneless pork loin rather than the fattier belly used for streaky bacon. In the modern product, cornmeal supplies little preservation; brining, refrigeration, hygienic handling, and cooking are what control spoilage and food-safety risks.
A contemporary brine commonly contains salt, sugar, and curing salt containing nitrite, although formulas differ among manufacturers and home cooks. After curing under refrigeration, the loin is dried, rolled in cornmeal, sliced thickly, and fried or griddled. It may appear with eggs at breakfast, but its best-known Toronto form is a stack of hot slices in a soft bun, often served with mustard. Public-market vendors helped turn that straightforward sandwich into a recognizable expression of the city’s food identity.
Outside Canada, the name can cause confusion. American “Canadian bacon” is also made from pork loin, but it is commonly smoked and sold fully cooked; it is not automatically equivalent to peameal bacon.
