Airag and kumis are related traditions of fermenting mare’s milk across the Eurasian steppe. Airag is the usual Mongolian name, while kumis and related forms occur in Turkic-speaking regions; the terms should not be treated as exact synonyms for one standardized recipe. Medieval written accounts nevertheless make the underlying food practice unmistakable. Travelers at Mongol courts described a sour, intoxicating milk drink consumed by herders and elites, offered in hospitality, and served at communal and ceremonial occasions.
Mares produce milk during the warm season after foaling, and pastoralists could collect it by repeated milking while allowing foals continued access. Fresh mare’s milk is comparatively rich in lactose but relatively low in fat. Left untreated, it spoils quickly. Fermentation redirected that abundant sugar through lactic-acid bacteria and yeasts, producing lactic acid, carbon dioxide, and a modest amount of alcohol. The result was tangy, sometimes effervescent, and generally more stable than raw milk, although it remained a short-lived product rather than a durable store for winter.
Traditional preparation varied by community and period. Fresh milk was added to a vessel containing some already fermented liquid and then agitated repeatedly. Medieval descriptions mention skin containers and vigorous stirring or churning; later and modern practice also uses wooden vats and other containers. Continued mixing distributed microorganisms and oxygen and helped maintain active fermentation. Because the process depended on temperature, starter culture, vessel, milk composition, and fermentation time, acidity and alcoholic strength were never completely uniform. Distillation could produce stronger milk spirits in some later or separately documented contexts, but ordinary airag or kumis was itself only mildly alcoholic.
The beverage belonged to a mobile pastoral economy in which horses supplied transport, military power, status, and milk. Turning mare’s milk into a shareable drink linked animal management to social life. Serving order, drinking rituals, and the ability to provide ample fermented milk could communicate hospitality and prosperity. At the expanding Mongol courts of the thirteenth century, foreign visitors encountered the drink within a political world whose wealth still depended heavily on herds and seasonal pasture.
Fermented mare’s milk remains important in Mongolia, Kazakhstan, Kyrgyzstan, and neighboring regions, though production now ranges from household batches to regulated commercial bottling. Modern containers, refrigeration, controlled starters, and laboratory testing can make it more consistent and safer, while some products are pasteurized or altered for longer distribution. These versions continue a defensible historical connection: the conversion of seasonal mare’s milk into an acidic, lightly alcoholic beverage. Claims that any single modern recipe precisely reproduces a medieval drink, however, go beyond the available evidence.

Historical context
Temüjin was consolidating alliances and defeating rivals on the Mongolian steppe; in 1206 he would be proclaimed Chinggis Khan. Within decades, Mongol armies and administrators connected territories from northern China to Central Asia and eventually Eastern Europe. Steppe households depended on mobile herding, seasonal pasture, felt dwellings, and horses for transport as well as food. Long-distance routes already carried textiles, metals, spices, and religious ideas across Eurasia, but everyday nourishment remained strongly shaped by local herds and the short northern growing season.
